I love to bake the most. I grew up baking with my grandmother. Oddly enough, I was the only one out of all of the many grandchildren that ever wanted to learn from her. Some of my best memories are of those times...

Pierogies, cookies, Thanksgiving dinner...mostly holiday meals.
My cooking triumphs
I am the best at baking. It has only been more recently that I have been less afraid to experiment and deviate from a recipe. Now, I add a dash of this or a pinch of that and make it my own! I am always the happiest when my darling loves something that I have prepared...that's what cooking is all about to me.
My cooking tragedies
I have never been able to perfect macaroons...I made them and they were like little gobs of I don't know..They sure didn't look like a cookie!

Unstuffed Cabbage Roll
This was really good but needed a lot of tweaking. I followed the suggestions of other reviewers and used tomato soup, a bit of sauce, seasoned diced tomatoes, and added extra water. I added a cup of brown rice and beef broth. Because I used ground turkey I used more spices. I'm Polish so I added vinegar, brown sugar, and caraway seeds to be more like my cabbage rolls. My cabbage wasn't fully done after the suggested cooking time so I cooked for another half hour. I think next time I will use less meat though, because this made a ton. Hopefully it freezes well.

Spaghetti with Broccoli and Chicken
This was an excellent base for a healthy one-dish meal. I sautéed my chicken in a bit of olive oil with minced garlic. If you aren't generous with spices this dish may be bland. After cubing chicken, I added cooked broccoli, chopped onion, and a cup of chicken broth to the pan and simmered while the pasta was cooking. Seasoned to taste, tossed with pasta and added freshly grated Parmesan cheese before serving. Hubby gave this his seal of approval when he said to "put it in the book." Thanks for sharing!

Spicy Garlic Lime Chicken
Looking for a quick dish to throw together on a busy weeknight, I happened to find this gem of a recipe. I added a bit of crushed red pepper to the spices and a bit of chicken broth while sautéing per other reviews. My husband raved over this. Placed the chicken over a rice dish (in pyrex) I threw together and poured the sauce over everything. Baked at 350 for 15 minutes. Thank you so much for this recipe C.Perez!
