Vegetarian Bodacious Broccoli Salad

Great for a picnic! I used a food processor to shred my cheese and chop my veggies for a super quick prep. Subbed simulated bacon bits to taste (lots!) and low fat sour cream for the yogurt. Delish!

Tomatillo Salsa Verde

This recipe is perfect! I made it with tomatillos and a "super chili" from my brother's garden. These were award winners at the CNE/state fair and I could eat this on everything. It couldn't have been easier.

Coconut-Curry Lentil Stew Served over Quinoa

Unfortunately I think it was the quality of the curry powder I chose for this recipe. I'm not sure what makes a good curry powder exactly, only that I was hoping for something that tasted like my favourite Indian restaurant and instead got something spicy-bland. While I love quinoa, I think basmati is the way to go based on texture.

Easy Pie Crust

I needed a premade pie crust for a recipe with a chocolate filling. After I broke the one I bought I panicked and found this recipe. It was so easy and the texture so great! It really was too salty for a dessert recipe, although everyone said it worked well with the chocolate. In the future I'll probably add a dash of salt and keep the rest of the recipe the same. Definitely a keeper!

Ceviche Self-Portrait

I made this with a pound of scallops and served it with tortilla chips. We let it marinate for 2 hours and unfortunately the limes we chose turned the dish a bit bitter. We added some honey and more salt and left the dish alone until the following day. Served as a nibbly app, our guests raved about it.

Fiery Fish Tacos with Crunchy Corn Salsa

Really amazing - I added cumin and honey and used seeded cucumber in place of jicama. The salsa goes perfectly with "Fish Tacos Ultimo" if you're looking to change up the spices for your tilapia.

Fish Tacos Ultimo

Healthy fish tacos that got raves at my birthday barbecue. I was distracted when I was making the recipe and ended up mixing the spices with the lime juice, so I basted the fish with it before cooking and it was still fantastic! I reduced the salt by half and only used a quarter of the black pepper, omitted the cheese and used lettuce and the salsa from the "Fiery Fish Tacos with Crunchy Corn Salsa." Yogurt dressing was stunning with Sriracha sauce. This recipe makes A LOT!

Quick and Easy Pizza Crust

Spicy Pumpkin Chili

The pumpkin taste and spice was unique, so I might try adding it to a staple chili recipe instead of this one. I prepared the recipe exactly as written, but it was bland and not very spicy. Once finished I added a significant amount more of all the spices, lots of extra beans, and ground chipotle.

Quinoa with Sweet Potato and Mushrooms

Very delicious and cooked quickly. I liked toasting the quinoa, but I found the broth I added at another commenter's suggestion competed with the veggies. Next time I'll stick with the recipe as written.

Baked Beans from Scratch

These were really good - the sauce was thick and caramelized. I used all the cooking liquid from the beans adding it throughout the baking time. I followed the recipe exactly as written, but doubled it. That being said I won't be making this recipe again. The length of the cooking time combined with constantly having to monitor the beans when baking so they wouldn't dry out wasn't worth the taste payoff.

Juicy Thanksgiving Turkey

My first turkey! Our 10 person Thanksgiving dinner loved it and agreed that it was in their top 3 turkeys ever. Was easy to prep the ingredients the night before and assemble once the oven was hot on the day.
