Fresh Southern Peach Cobbler

Tried this recipe with peaches 3 x's now. First time with fresh peaches, second time with canned peaches. Of course the fresh was soo good!! But I must say the canned were also pretty good! I used all of the juice from one 29 oz. can of sliced peaches with 100% juice and then just scooped out the peaches from the other 29 oz.can. and continued as the recipe called for. Followed recipe exactly and didn't change one thing. So, so good!!! It's now my favorite cobble recipe! Thanks for the recipe AEPOSEY!!!

Easy Lima Beans

Cooking ANY frozen or canned vegetable in chicken broth or beef broth makes a tremendous difference, believe me!! My neighbor across the street taught me this trick. No water, just broth. And cooked this exactly as stated (had never thought of the onions!) and was so good!

Perfect Pumpkin Pie

This is another slant on Pumpkin Pie. I found it to be REALLY tastey and a bit different on the regular PP! Remember to bake pies on lower oven rack! Also, read footnotes!!

Gluten-Free Peanut Butter Cookies

Sorry I don't have a picture! These were so, so good! I made half a recipe to test them out. Listened to others and added 1/2 teaspoon of vanilla, 1/2 teaspoon baking soda, 2 eggs, 1 cup of chocolate chips for half of the recipe. Also listened and after mixing let sit for 10 mins. before placing on cookie sheet. Baked 1 tablespoon of cookie dough for 10 mins. and heeping tablespoon of cookie dough for 12 mins. When they begin to get a golden color on top they are ready!

Tasty Tuna Burgers

I don't like tuna that much but decided to give this a try...so glad I did! Made a few changes. Used one 12 oz. can of albacore tuna (that's a must!). Didn't have chili sauce so used one Tablespoon of chili powder. Everything else stayed the same. Didn't serve on bun, just served as meat with tomatoes, lettuce and Ranch dressing on the side. Also fixed garlic mashed potatoes (made with red potatoes from A.R.) SUCH A HEALTHY MEAL. So glad I tried it!

Hash Brown Hot Dish Stuffed Bell Peppers

Modified a bit. One pound beef, half can roi tel (no juice), cumin, frozen hash browns, one can of golden mushroom soup, onion, and green beans. Stuffed and covered with shredded cheese. Served with long grain wild rice and some grape tomatoes.

E-Z Drop Biscuits

Great and FAST way to start a biscuit morning! I use an ice cream scoop to lay each biscuit on parchment paper cookie sheet. Didn't have cream of tarter and came out great. Also, they reheat in oven perfectly. I don't think anyone could mess these up!! I think the bigger the scoop the better the biscuit, although you will only get 6-8 biscuits!! Oh, they freeze nicely too.

Chef John's Buttermilk Biscuits

I've never been able to make scratch biscuits but after only 3 try's, I'm doing it!!! I cut my butter up and put it in a zip lock baggie so it will be ready when I am! I cut the biscuits a little thicker and they come out great. Keep buttermilk and frozen butter on hand all the time!

Slow-Cooker Chicken Tortilla Soup

NOTHING WRONG WITH THIS RECIPE AT ALL!!!!This was the BEST soup! So easy. I used rotisserie chicken...so much easier and just as tasty. Mixed all ingredients in crock pot night before and all I had to do was plug it in this morning. I cut the tortillas in strips and fried them in oil right before serving and that really made it taste even better along with the cilantro in the soup and sprinkled on top!!!

Breaded Ranch Chicken

Sooo good and SOOOO fast to make. I didn't alter anything, but I did use chicken tenders, about 9 of them. Just keep chicken breasts or tenders in your freezer along with ranch dressing mix and Parmesan cheese (in freezer) and you will always have a great meal ready to make! Thanks Launa! :)

Slow Cooker Salisbury Steak

Loved it! Easy with some modifications: 1/2 pkg of onion soup, 1 can low sodium cream of mushroom soup, one can golden mushroom soup, and fresh sliced (thick) mushrooms on top of meat before I poured the sauce over all. Also, I had a pound and a half of meat and it made 9 medium/small patties. Suggestion...cook on high for one hour then low for 4-5 hours. Served with brown rice and asparagas!!

Loved it! Best Salisbury Steak I've had!! Easy with some modifications: 1 can low sodium cream of mushroom soup, one can golden mushroom soup, and fresh sliced (thick) mushrooms, makes 8-10 medium/small patties. Suggestion...cook on low for 6-8 hours. Served with brown rice and asparagas!!

Baked Spaghetti

Wow! It was absolutly fabulous. Makes plenty for a family meal or lasted for 3 meals for me and my husband. Next time I think I'll try using cottage cheese to see how that taste!
