I don't understand casseroles. The whole genre. I just don't get it. Somehow I'm lost as to why throwing a bunch of indiscriminate veggies, canned soup, and ground beef or chicken (is it every anything but ground beef or chicken?) into a pan and topping it with cheese sounds like a super… MORE

Hey there! I'm a college student / brand new bride / hopeful housewife that really loves to eat! I've enjoyed cooking ever since my dad and mom started cooking with me when I was a young kid. I'll try almost anything and I love to cook anything with a gourmet flair to it! More than anything, though, I love cooking for my husband, family, and friends, and opening my home to others to share a meal and some Christian hospitality!
My favorite things to cook
I love to cook anything! I'm just starting to get into baking, it's a little tough for me because I really love being creative and there are some things about baking you just *can't* change (measuring out things like baking powder or yeast is something that I can only do with a great deal of self-control! :)). Nevertheless it's been a tasty ride! I also love cooking with the Mediterranean flavors that I grew super fond of when I spent a semester on a missions trip in the north of Spain. Gazpacho is my husband's personal fave. Fresh garlic is also big ingredient in our home, my husband would eat it a dozen cloves at a time if I'd let him! I think my favorite thing about cooking is that it's something Steve and I have always loved to do together! Whether it's making sushi, chocolate lava cakes, or a big pot of chili, sharing time in the kitchen is a huge part of our lives.

Ginger Glazed Mahi Mahi
This fish was super. I had to use tilapia because that's all I had on hand, but the glaze made even that taste fancy. My only disappointment was that I didn't have a ton of glaze left over after marinating the fish - next time I think I will double the glaze recipe so I have plenty left over for sauce. Served this over egg noodles and it was a big hit with my husband! :)

Ginger Lemonade
This was really tasty. My only complaint is that there wasn't a super strong ginger flavor in my lemonade, in spite of the amount of ginger I used. I'm not sure if maybe grating the ginger into the lemonade would disperse the flavors a bit more. Also, I was trying to make this in a hurry so I just threw in regular ice, but that did water it down a bit too much for me. Next time I will plan ahead and freeze some of the lemonade into ice cubes beforehand. Other than that it's a great grown up twist on a summertime classic. :)

Tomato Bisque II
If I could, I would give this 10 stars. I made it for my husband and myself last night, and he gave it rave reviews. The main thing that I changed was that I did not skin and seed the tomatoes at all. I just pureed them in my trusty blender before cooking and everything went really quickly. Also, I used whole milk which made it super creamy without being *soooo* heavy like cream. It was fantastic. I think what sets this soup apart from run-of-the-mill tomato soup is the fact that it's not super acidic. Instead it's silky smooth and rich - the beef stock also helps with this. My husband already asked when I can make this again! :) Thanks Judy for the great recipe! :)
