Peanut Butter Vegetable Chicken Soup

I love this soup. I make huge potfuls 3-4 times every winter. I have substituted a product called Better than Peanut Butter, for the Peanut Butter in the recipe and it tastes just fine.. maybe a little lighter in peanut flavor. It greatly reduces the fat content of the soup.

Spicy Sweet Potatoes

Wonderful.. I dont like sweet potatoes with a lot of sugar, but the cajun seaoning really tempered that.. was wonderful. I ate too many but it was delicious. I baked these on my silpat.. no sticking

Broccoli Pesto

Delicious.. the creamy texture is wonderful. I used the florets and stems of a whole broccoli since it was going to pureed anyway... cheaper. Now I need to figure out how not to eat all of it as a snack.. would be a nice chip dip or even a spoonful on top of hot soup

Meatball Nirvana

I really enjoyed these. I made them with ground turkey and isntead of the cheese I used nutritional yeast which gives a cheesy flavor. i got occupied when I was making these and overbaked them.. my own fault. When I reheated them the next day, I reheated them in some chicken stock on the stove.. not dry anymore!

Greek Chicken Pasta

This was really good! And filling to boot. I used 2 ounces of pasta per serving and 3 ounces of chicken per serving, instead of the amounts given in the recipe. I also used whole wheat pasta. Other than that, all it needed was a few extra spices for zip, my own preference!

Slow Cooker Boneless Turkey Breast

Yum.. loved this. I had a small boneless breast so I reduced the cooking time to 5 hours on low and it was perfect.. nice and moist and I loved the herb crust

This is my recipe. The dough can sometimes be testy so if it get too soft, pop it in the fridge for a few minutes but don't leave it in too long. Too long and you won't be able to get it pressed!

Sopapilla Cheesecake Dessert

Awesome.. Made this to take to a church potluck. I cut back a little on the butter and sugar and it was fine. I used light cream cheese and reduced fat crescent roll dough... delish!

Pasta Primavera with Italian Turkey Sausage

Really delicious!! I used a chicken chipolte pepper sausage so I left out the red pepper flakes and added the parmesan on top of the serving instead of mixing it all in. I too used a can of diced petite tomatoes instead of chopping. I also added a lot more squash because you can never have too many veggies! This is a wonderful one dish supper. I'll make it again.

California Grilled Veggie Sandwich

Very delicious. I swapped the red pepper for eggplant and grilled everything on my stove top grill. I also used a sprouted barley bread. Together with a bowl of chicken vegetable soup, it was a perfect cold weather meal.

Loved these... I got 10 biscuits. Popped the bag in the freezer for dinners. Defrosted one tonight.. just as yummy. Make the entire batch when you make them... they froze well

Turkey Pumpkin Enchiladas

This was so good. I added some fresh spinach to the filling and left out the boullion. The only change I'd make next time would be the beans. The filling was very soft and I'd prefer a bit of texture, so I'll use a can of whole black beans and smash up half of them, leaving some of them whole

This was really delicious. The only issue I had was spreading the paste.. was very thick .. I added a bit of oil to make it easier to spread. Next time will use a little more adobo sauce

yum. I baked these in a mini tart pan..baked for 10 minutes @350. Got about 50 mini tarts. Filled half of them with peanut butter filling.. the other half with chocolate. Delicious!

Easy Eggplant Pita

I just loved this. I did things a little different. I chopped up the eggplant and roasted it in the oven with some balsamic vinegar and olive oil spray. I sauted the mushrooms, onions, fresh garlic and red pepper flakes on the stove and added the roasted eggplant. Put everythhing in a whole wheat pita with a little cheese and a tablespoon of low fat ranch. Just wonderful. Thanks for the recipe

Tex-Mex Squash Bake

I really liked this.. I used ground turkey and probably more zucchini than the recipe called for. I forgot the corn and topped this with a mexican cheese blend. I have some leftovers so it hink I will put them in wraps and have them for work lunches next week. Made this again...almost 3 years later, Subbed hominy for corn and used chicken,. Stll delish. I like that it doesnt use a lot of cheese
