Peanut Butter Vegetable Chicken Soup

I love this soup. I make huge potfuls 3-4 times every winter. I have substituted a product called Better than Peanut Butter, for the Peanut Butter in the recipe and it tastes just fine.. maybe a little lighter in peanut flavor. It greatly reduces the fat content of the soup.

Biggest Bestest Burger

I substituted ground turkey breast for the beef and used fat free cheddar cheese. It tasted wonderful. I plan to have this again.

Creamy Potato Casserole

I took this to a church potluck and it vanished! I added broccoli and canadian bacon and used reduced fat sour cream and reduced fat cheese.. Very good. Will keep this recipe as one to make again.

Unbelievable Grilled Garlic Bread

This was a really yummy change from regular garlic bread. I used 1 gram fat mayo and low fat cheeses and was happily surprised it turned out well. I served this to a friend who thinks low fat is icky, and she loved this!!

Addictive Sweet Potato Burritos

I made these with black beans, as others have recommended and I also left out the water (used the water that came in black bean can). I didn't have any cayenne pepper, so added some tabasco for zing. Very good. I served with sour cream and salsa.

Seared Scallops with Tropical Salsa

I made the salsa for some fish tacos. It is so yummy!! I have some scallops in the freezer and will have to try the rest of the recipe. The salsa is definately a keeper.

Stuffed Sole

This was very easy to make. A nice way to use sole. The only change I made to the recipe was adding a bit of red pepper to the sauce. Very tasty.. will make again.

Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu)

This wasn't awful, but I don't think I'll make this again. I have made sweet and sour before, using a mix for a base and liked that better. Maybe I should have cut down on the sugar more. I also think this needed far more veggies.

Chicken Honey Nut Stir Fry

This was very yummy. I, too, changed things a little bit. I halved the amount of chicken and added broccoli and more carrots. I served this over bulgar wheat. This is another allrecipes keeper. I think I will try adding a dash of tabasco or red pepper flakes to the leftovers. With or without the extra spice, this was terrfic.

Grilled Caribbean Chicken

This was very tasty. Somewhat sweet and spicy. I cooked the leftover marinade, brought it to a boil to kill any bacteria and served it over the top of the chicken. I served this with grilled zucchini and couscous.. wonderful meal. Thanks for the recipe.

This was really tasty. I made a few seasoning changes. To the egg foo yung batter, I add garlic and some red pepper flakes. To the sauce, I added a dash of honey and some more garlic. Very good dinner. I will make this again.

Stir-Fried Vegetables with Chicken or Pork

This turned out really well. I added some red pepper flakes and more vegetables than the recipe called for. I served this over udon noodles. Great way to get a lot of tasty veggies. I didn't have chicken or pork, but used turkey tenderloins.. delish

Tomato Pesto Batter Bread

This was a terrific quick bread. I added cloves of garlic, chopped. I took this to dinner at a friend's house, where I was told " this tastes like a bread from a gourmet shop." This was served with a crab linguine with spinach and fresh vegetables. Another keeper in my allrecipes recipe box.

Breakfast Casserole I

This was really tasty. I did make a few modifications based upon what was in the fridge. I used turkey pepperoni instead of bacon, low fat mexican cheese blend and skim milk. I let it sit overnite in the fridge and baked it the next morning. I liked how this recipe can be altered so many different ways.. different meat, different cheeses and I bet even other veggies would work well with this good basic recipe. This will be kept in my recipe box.

Mexican Baked Fish

This was another allrecipes winner. I wasn't sure about the combiation of ingrediants either, but thought I'd give it a whirl. I used tilipia fish, a pineapple salsa and low fat mexican cheeses. Mmmm what a nice surprise.. this was yummy and very very fast. A keeper

Spinach and Orzo Salad

Oh my this was wonderful. I could've eaten just this for a couple of days and been very happy. I halved the recipe and served it for guests, who demanded the recipe. :) The only changes I made were using fresh basil instead of dried and black pepper instead of white. I know there is a lower fat/calorie feta cheese that I might try next time. Yes there will be a next time on this one!

Shrimp Durango

This was a very tasty way to use shrimp. I served mine over spinach fettucine instead of regular fettucine. The dish had a nice bite, from the cayenne pepper, but think it needed another ingredient. I added a little parmesan at the table and that seemed to get a little closer. Maybe some grilled vegetables? Anyway, this is a good recipe and a keeper.

Vegetable Couscous

This was wonderful. Lots of nice veggies, quick and easy. I served grilled chicken with this and it was a very good meal. I added garlic to this, but that is the only change I made.. well maybe a bit more hot sauce.
