Golden Vegetable Chicken

Well, I liked the idea of this recipe but it just didn't quite get there for me. The seasoning on the chicken, while nice, was not enough..no seasoning at all on the veggies and it was needed. Then the temperature. No way were the veggies going to cook well at 325.. I cooked at 400 for an hour and most of the veggies were done. A few of the carrots were not so unless you cut them really thinly, I would suggest cooking them a bit first. Last thing.. if I had used the amount of veggie listed in the recipe, they wouldn't have all fit in the pan... as it was with one sweet potato, one white potato, one onion and a few more carrots.. it was very full.

This was very good... the chicken seasoning was stellar, the yogurt sauce quite good and the peppers and onions gave a nice crunch. Make sure you use lots of the sauce.. the pita bread tends to be dry

Sunchoke and Sausage Soup

Been wanting to make this for a very long time. Finally got some sunchokes. I subbed chicken sausage for turkey and used dried basil and oregano. really delicious.. first time trying sunchokes. Can't wait to use them in other dishes...

Vegan Vegetable Muffins

These were delicious.. made per recipe. A few things.. this makes a very thick dense dough.. and makes more than 12 muffins. I made 12 muffins and out the rest on the bottom on a loaf pan. That was fine with me.. topped this with mozzarella cheese after it came out of the oven and had veggie cheesy pizza flavored bread for dinner

Veggie Sneak In Meatballs

I liked these a lot. I let the zucchini drain a bit in a colander to get rid of some of the moisture and it worked fine. I made half of the meatballs by adding the crumbs to the mixture.. and half as the recipe states.. rolling them in the crumbs. I liked the ones rolled in the crumbs a little better

Tomato Soup II

This was delicious. I seeded the tomatoes prior to cooking and did not run through a sieve.. I like the little pulp pieces left after pureeing with my immersion blender

West Texas-Style Buffalo Chili

Making half a recipe - used one can black and one can kidney beans, Left out chili sauce. Cooked meat, onions and peppers on stove top.. then everything in crockpot for 6 hours. Superb

Broccoli Pesto

Delicious.. the creamy texture is wonderful. I used the florets and stems of a whole broccoli since it was going to pureed anyway... cheaper. Now I need to figure out how not to eat all of it as a snack.. would be a nice chip dip or even a spoonful on top of hot soup

Roasted Eggplant and Mushrooms

I just finished eating this and loved it. I read the previous reviews about it being watery and by looking at the ingredients. yes I can see why. Mushrooms and zucchini have a really high water content. I chopped everything up, salted it and let it sit in colander for about 30 minutes.. added the seasonings and tomato paste right in there. Mixed it up and baked.. No need for the water!! Use lots of fresh cracked pepper...
