Noodles and Eggs

I did.i added some onion , garlic, red pepper and spinach. Found some dried porcinis I needed to use up so threw those in with pasta. It was good.. needed another egg white though, but that was due to me adding veggies Next time I'll try this with ketchup as per recipe submitter.. i forgot and it was great without it

Pizza-Style Portabello Mushrooms

These were very tasty. I didnt add the olives since I dont care for them. These would be good with a little pepperoni added ( if you arent vegetarian) I cut back a little on the cheese as there was plenty for me. The only change I think I'll make next time if pureeing the tomatoes a little bit

Chilled Kale and Potato Soup

very good. Make sure to use the red pepper.. It cuts down on some of the bitterness of the kale. I tried this per the recipe and pureed. I preferred this pureed

Authentic Tortellini Soup

Mmmm I cannot find enough words to say how delicious this was so I'll just say.. mmmm. I made my own puree out of fire roasted tomatoes and used a vegetarian sausage as I had some leftover in the freezer.. mine sliced instead of crumbled

Sriracha-Lime Kale Chips

yumyum.. was going to make the plain salted ones this weekend but then saw this new recipe. I adore Sriracha so I had to make this, Really delicious. I wish I had more kale to make more. Only change for me was a little more salt at the end.. I'm a salt fresk

This was tasty. For me it needed some more seasoning, so I added a salt that had some heat to it. I also used some chicken sausage as that was what was in the freezer

Holiday Rosemary and Ham Casserole

This was really good. I didn't have the full amount of ham so I used what I had.. still came out delicious. Next time I think I'll leave the ham the same amount, but add a veggie like broccoli

Seitan Diavolo

This was wonderful. I had home seitan in smaller pieces so I didnt get handsized slices to nestle the artichokes in.. came out great with the artichokes scattered on top. I think next time I'll dice the seitan up a bit rather than long slices.. was a little more difficult to eat

This was tasty.. i used carrots celery garlic and onion. I do think more curry and a dash of heat would be good. I tried it as is and pureed and I preferred in pureed

The flavors were really tasty.. quite spicy.I added a spoonful of yogurt and it was perfect. I dont think I'd reduce the heat next time.. I like the bite..

Delicious chili. It does improve the next day. as most soup and chilis do. Adjust the chipotle to your desired heat level. I used black beans and white kidneys as that was in the cupboard

This was tasty.. seasonings good. The only change I would recommend is cooking the seitan a bit more until it gets some texture and bit browned rather than just warmed

Spicy Chicken Broccoli Casserole with Fresh Arugula

This was delicious. I used oil for the roux and cut back on that a bit.. an used a jalapeno pepper because I am a wimp. Tios doesn't make much sauce so if you like it saucy... make more. For me it was fine..a very light coating of sauce that is pretty much absorbed into the broccoli. Next time I will use panko crumbs on top.. was out this time

I just had this and boy was it GOOD! I used homemade seitan and added a little garlic when I was sauteing the seitan up. I am wishing I had more.

Heavenly Lemon Cake

I made these into mini cupcakes... batter tasted great Baked @ 350 for 15 minutes. Perfect. Then I glazed them. WOW. The glaze was very strong.. not in a good way either. I let them sit overnight and they did tone down quite a bit. I like them now. I dusted the tops with a bit of powdered sugar and next time, I think I will add some chopped almonds as I like that flavor combo

Healthier Monkey Bread I

Really tasty. I only had one roll of whole wheat pizza dough, so I made this in a loaf pan.. baked for about 25 minutes. added the nuts, but no raisins..
