Delicious chili. It does improve the next day. as most soup and chilis do. Adjust the chipotle to your desired heat level. I used black beans and white kidneys as that was in the cupboard

This was tasty.. seasonings good. The only change I would recommend is cooking the seitan a bit more until it gets some texture and bit browned rather than just warmed

Spicy Chicken Broccoli Casserole with Fresh Arugula

This was delicious. I used oil for the roux and cut back on that a bit.. an used a jalapeno pepper because I am a wimp. Tios doesn't make much sauce so if you like it saucy... make more. For me it was fine..a very light coating of sauce that is pretty much absorbed into the broccoli. Next time I will use panko crumbs on top.. was out this time

Seitan Philly Cheese Steak Sandwiches

I just had this and boy was it GOOD! I used homemade seitan and added a little garlic when I was sauteing the seitan up. I am wishing I had more.

Heavenly Lemon Cake

I made these into mini cupcakes... batter tasted great Baked @ 350 for 15 minutes. Perfect. Then I glazed them. WOW. The glaze was very strong.. not in a good way either. I let them sit overnight and they did tone down quite a bit. I like them now. I dusted the tops with a bit of powdered sugar and next time, I think I will add some chopped almonds as I like that flavor combo

Cheesy Polenta Casserole

Healthier Monkey Bread I

Really tasty. I only had one roll of whole wheat pizza dough, so I made this in a loaf pan.. baked for about 25 minutes. added the nuts, but no raisins..

Really tasty. My only sub was black beans for the red beans, used what I had in cupboard. I wasnt sure how all that celery would be, but it was great. I didnt miss meat at all

Healthy Chocolate Mug Cake

I subbed chocolate sugar free torani syrup for the honey. I had a large mug so I figured I'd try it all in one. I got two drips down the side so all went well. It did puff up quite a bit when cooking. At first I wasn't thrilled with the texture, but I let it cook and stirred it u a bit with a few areas that didnt cook all the way... that tasted much better to me so I think when I make it again, I will slightly undercook this.. nice idea for the cake

Paleo-ish Salmon Burgers

Yummy. I used almond meal and it has a nice taste.. it did turn out rather soft with this. I served my patties with sriracha and cream cheese. Not sure how Paleo that is but I liked it

Slow Cooker Tomato Soup

This is a very tasty soup..after it sat in the fridge overnight. It tasted a lot like just the juice when I tasted it right after cooking, so do let this sit overnight for best flavor if you can. One hour on high did not even warm this soup up for me so I set the crockpot for 3 hours on low and that did the trick One last thing.. this makes a LOT more than 6 servings..be ready

Noodles and Watermelon

I made this on a dare and I surprisingly liked it. The dumplings were a bit thick for me, but maybe that is how they are supposed to be? The dumplings by themselves were a little dry but when you eat a bite of dumpling with the melon, it all changes.. yummy

This is delish stuff. The bitterness of the kale rally goes well with the buffalo sauce.. I used the Red Hot stuff. My only change was leaving out the zucchini because I used them all up in soup accidentally.. so I added a few more carrots and some celery. For non Paleo folks, sweet potato or yam in this would be wonderful

These were nice. I like the contrast of salty and sweet so I added a bit of spicy salt.. also good with some wing sauce. It went well with sweetness from parsnips
