English Muffin Breakfast Strata

I really liked this one a lot. I used some morning star farms veggie sausage patties, double fiber whole wheat english muffins and egg whites. I do like a bit more egg so I added a bit more. I'll make this again.. really easy. Don't know why I never thought of using english muffins, but it was better than using bread.

Inside-Out Pizza

YUm.. made these for work lunches this week. Only change was to add some sauteed broccoli slaw to them to bulk them up. Popped them in freezer and then took to work and nuked

Basil Chicken Thai Noodles

This recipe needed a lot of help. As it was written, it was a pile of peanut butter and chicken noodles and no other flavors. I added snow peas, carrots, red peppers, more lime and more soy sauce. Much better! I really don't know how much this sauce contributed to the flavor.. I could get the same effect really with using chicken stock, basil and some cornstarch

Eggy Cheesy ConFusion Casserole

I really liked the seasonings in this.. quite tasty. A friend had some home grown mild peppers so I threw in one of those and I used egg beaters. I added a little salt and a lot of cracked rainbow peppercorns because I am a pepper freak. I'll make this again. Next time I'll add a bit more egg

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

I used raw whole wheat dough, par baked it, then cooked this all on my stove top grill pan. I used tomato chicken meatballs since my store didnt have the sausage. Was a nummy pizza

Roasted Broccoli & Crispy Polenta with Roasted Pepper & Asiago Chicken Sausage

Since I am lazy, I didn't bother with steaming the broccoli first,, just threw it in the oven.. since I had time to roast it. This was delicious and I love roasted broccoli.. the ends get nice and crunchy

Cheesy Egg Breakfast Tacos

These tasted good, and enjoyed them. I did try the same recipe w/o the cheese sauce added to the eggs and there was a very slight difference.. hence the three star rating. I don't think the sauce really adds anything to the eggs.. I will make this recipe again, but will add a spoonful of sour cream to the eggs.. similar effect. The sauce is really quite bland.

Easy Weeknight Bacon Mac 'n Cheese

Really nice.. I cooked up my own bacon and added a bunch of fresh cracked pepper to the sauce. I also baked it with the crumbs instead of adding them when cooked as the directions instructed.. dont understand putting pale neked crumbs on mac and cheese??

Loaded Bacon Potato Pizza

Tasty pizza.. I tasted the sauce first and knew it needed some help so I punched it up with sme garlic and onions. Topped the pizza wuth sour cream after baking since what's a baked potato with no sour cream?

Healthier Buffalo Chicken Dip

Tasty.. I actually used this as a filling for a lunch wrap.. used ff cream cheese and topped wit sauteed broccoli slaw.. spicy.. next time I may cut back on the heat a bit. I also grilled my own chicken

Extra Caffeinated Brownies

These are really good. I didn't change anything as I wanted to experience the full coffee flavor..Only issue.. it took a LOT longer then 30 minutes to reduce 8 cups of coffee to 2/3 of a cup . I made the reduction the night before and then threw the brownies together quickly the next morning. I don't think these would be good for kids as they ardent very sweet and the coffee taste is quite pronounced.. which is good for me

I used chicken breasts and turkey smoked sausage. Couldnt find canned northern beans so I used white navy beans. This was really tasty.. will make it again as weather gets colder

Crispy Garlic-Parmesan Chicken

I used butter buds instead of butter to dredge the chicken but otherwise followed the recipe. The sauce is quite tasty. I did find the chicken to be very anemic looking after the stated baking time so I broiled it for a few minutes to get it browned.. since we eat with our eyes first

Loquat Chicken

This was good. I thought the sauce was too gingery when I tasted it by itself, but when I had it with the chicken it was fine. Didn't have grapeseed oil, so I used canola. Next time I think I'll add a green veggie to this... was a nice way to use loquats

yumyum loved the salami in this. I had leftover frozen artichokes and fresh mushrooms so I used that. Also fresh basil and the cheese I used was a mix of mozz, cheddar and jack

Awesome.. use baby bella mushrooms, frozen artichokes and made Chef john's creme fraiche recipe .. was yummy hot. cold and room temp. Was devoured at party.. lots of compliments

Smoky Black Bean Burgers

Tasty, but I discovered I don't think I really care for liquid smoke. For me next time I make these I'll leave it out and add some other seasonings. They were very quick to put together. I made 3 patties instead of 4 because they seemed kind of small
