Tortilla Zucchini Casserole

MMM good. I cut back on the chiles and used red bell pepper. Added chicken to make this a one dish meal and cut back on the cheese. May have added more seasonings but I really didn't pay attention. Will make this again for sure

Vegetable Pinwheel Roll

Really tasty. I used ground turkey breast and mixed the onions into the meat. I used a broccoli, cauliflower and carrots veggie mix for filling.. seasoned it with some bacon flavored salt and used turkey bacon on top

yum.. just snarfed one of these down for dinner.. Tasty. I admit I made a change.. I didn't fry the bread. I LOVE the fried bread, but my stomach cannot afford the calories. I sparayed a pan with cookign spary, and cooked it on the stovetop.. It got nice and crunchy. It got a few puffy bubbles too. Only thing I'd do differnet next time is add a dash of salt to the dough..

I had this for dinner tonight and enjoyed it. I didnt have peach preserves.. used sugar free raspberry. Added more chicken. For my tastes, it needed another shake of soy sauce on top. I have leftovers.. yay

Mini Frittatas

I used a fat free ricotta, egg beaters and a reduced fat mexican cheese in these. I added some diced canadian bacon and used fresh parm.. probably more SP as well. I do agree with most that the cumin was strong and I like cumin. Next time I'll scale it back to 1/2 to 3/4 tsp. Mine took a bit longer to bake than the 25 minutes.. probably 35 to get cooked and the edges to get browned

Quick Italian Vegetable Soup

This is delicious. What I do is cook up the veggies til they are very tender, let it cool and then puree. Serve this as a cold summer soup... mmmm

Love this.. instead of crescent rools, I mixed up some multigrain pancake mix and prebaked that, topped with the sauted chicken apple sausage, hash browns and onions, added a couple wedge of garlic and herb cheese and used egg white2..

I added more zucchini and used some diced hash browns from the freezer since I had no raw potatoes. I liked the oregano in this.. really good. I bet this would be awesome with some feta on top too
