Hearty Crab Pizza

Reviewed: Apr. 15, 2013
This was delicious. I made my own crust, added seasoning to it and used canned crab instead of imitation. I also used hominy instead of corn since I cannot have corn skins. Really good. I'll make this again

Mocha Coffee Cooler

Reviewed: Apr. 14, 2013
I drink iced coffee 365 days a year so I thought I'd give this a whirl. I made it exactly per the recipe, oil and cooking spray included. The oil did emulsify this amd give it a oooler texture. I am not sure what the point of the cooking spray vs more oil. Anyway, I am glad I tried this as an experiement but this is not for me. The coffee creamer gave this a fake unnatural taste and I prefer the taste of real milk or almond milk in mine and the oil? While an interesting idea, the idea I was drinking oil - well just didn't sit well with my morning coffee

Vegetable Quiche

Reviewed: Apr. 7, 2013
I added an extra egg and cut back on the oil. For me, this needed a lot more seasonings.. and yeah... I miss some meat. I;ll make this again as I do like all the veggies, add some chicken and mre seasonings

Spicy and Creamy Vegetable Soup

Reviewed: Apr. 7, 2013
This is delicious.. only change I made was to use sour cream instead of heavy cream. My canned tomatoes had diced jalepenos and it made for a really nice spiciness, but not overwhelming at all.

Crustless Quiche by Pam

Reviewed: Apr. 2, 2013
This was delicious. I liked the tang of the sour cream. I had a little bit of ricotta to use up so that went in too. I would like to make this again soemtime, but I would add a green veggie and use a spicier sausage for my tastes

Sweet Potato and Peanut Stew

Reviewed: Apr. 2, 2013
Tasty soup. I did think it needed salt and some heat. I like the contrast of sweet sweet potatoes with a little zip, so I added some chipotle chili powder. My only change was to use a mixed bag of baby greens ( kale, chard and spinach) instead chard. Baby green are more tender imho.. nice dinner

Chicken Walnut Cheese Wrapped in Bacon

This was delicious. I noticed this didnt have any seasonings and since I am a salt fiend, I brined the chicken first. Used turkey bacon and a lower cal/fat blue cheese.. Scrumptious!

Delicious bread. I tried a different cooking method for fun and cooked this in the crockpot. Came out nice, but did take quite a bit longer.. was very moist when cooked that way

Hearty Italian Meatball Soup

Reviewed: Mar. 26, 2013
Yummy soup. I had some meatless meatballs in the freezer so I used those.. they got a little soft so next time I'll try this with turkey or beef ones. I used half the amount of pasta and added salt and fresh pepper

Wake-Up Casserole - Canadian Bacon

Reviewed: Mar. 26, 2013
Yum. I had regular hash browns in freezer so I used those, baked them up on their own first to get a little crunchy. Has regular plain egg beaters so I added onions, cilantro and red pepper flakes to compensate. I enjoyed this and look forward to the leftovers.. oh I think I used a bit more egg and added fresh cracked pepper

Mexican Raviolis

These were delicious. I used soy chorizo to cut back on the calories and grease and used manchego cheese.. Asadero had been in the store every week except when I went to make these!! I cooked these like potstickers since other mentioned them falling apart when boiled. Really enjoyed these.

Freaky how much this tastes like couscous!. My cooking time was a lot less, so watch this as you are browning.. takes a while to start but once it starts, goes fast.
