No-Cook Overnight Oatmeal

Excellent! I loved this tasty breakfast! I'm making it again tonight. This is so versatile, you can easily use different fruits or milks. I made it with non-fat milk last night, but tonight I will use almond milk. The consistency is perfect. I might use a tiny bit less cinnamon (personal preference), but other than that, the ingredients are spot on. Yum!

Spicy Strawberry Kiwi Peach Salsa

I'd give this 10 stars if I could! So easy to make and such impressive flavor! I made the recipe exactly as written using all fresh fruit. The only thing I would change is to double the recipe next time. As written, it made a perfect amount for two. Both hubby and I were wishing I had made more! I served it over grilled Pacific Sea Bass and served it with a fresh salad from my garden. The ideal refreshing meal for summer!

Strawberry-Raspberry No-Cook Jam

So quick and easy! I used half Sugar Twin sweetener and half sugar to cut the calories. The jam still set fine. I think next time I'll try using half the sugar and no sweetener and see what happens. The lemon zest adds a nice touch. I used about half the amount stated and that was perfect. The jam disappeared before I could even take a pic! :)

Three-Step Salad

A perfect summer salad! I just picked some romaine from the garden today and was looking for a new salad to try. Love the tangy dressing, the sweet mandarins and the crunch of the almonds and celery. A perfect blend of flavors! I cut back on the sugar in the dressing, and will probably leave out the sugar on the almonds next time when I toast them. Hubby (who isn't a big salad eater) raved about this the whole dinner!

Homemade Turkey Breakfast Sausage

I've been searching for the perfect turkey breakfast sausage and this is it! Finally! Not only is it much healthier than store-bought greasy pork sausage, it's delicious too! The seasonings are spot-on. I did use 93/7 lean turkey and the packages I bought (Jennie-O) were 1.25lbs each, so it made a little more than the recipe stated. I think if I used 1lb packages of turkey, I might lower the salt a tiny bit since the 2tsp stated was perfect for the 2.5lbs turkey I used. Also, DO NOT overcook these or they will be dry. Personally, I think 5mins per side is too much. Thank you cathy35 for the great recipe!

Robin's Cheesy Chipotle Grits

Delicious! The only grits I've ever had before were from a breakfast place and they tasted like flavorless goo. :) Needless to say, I've never been to thrilled with them. I finally decided to find a recipe, and see what kind of flavor grits can have. I'm so glad to have found this recipe! I followed the reviewer recommendations of cutting back on the salt (I used 1 tsp instead of 2) and I used 1 tsp of cumin instead of 1tbsp. I also used 2 chipotle peppers instead of 4 and 'mild' green chilies. So good, so creamy, so cheesy! I think you could easily omit the baking step. They were just as tasty right out of the pot. A perfect blend of flavors. I served these with smoked pulled pork and corn from my garden. A keeper!

Beer Margaritas

YOU MUST TRY THESE! Do it! NOW! These are so good. The only change I make is to use 7-Up/Sprite (or any lemon-lime soda) instead of the water. The last time I made it I used Sam Adams Summer Ale (brewed with lemon peel - yum!). Basically any light beer would do the trick. I'm not even a beer fan and I LOVE these margaritas. You don't even taste the beer. These are a staple at my summer cook-outs now!

Sandy's Summer Sausage

I love summer sausage, but not a lot of places carry it. I saw this recipe and knew I had to try it. Delish! The hardest part is waiting to cook it, then waiting again to eat it! It smells so good while it's cooking. I used very lean ground beef (96/4) which made the sausage a little more dry, but it was still very enjoyable. The only suggestion I have is to use less mustard seed. I served this on a meat, cheese and cracker tray and totally impressed my guests with my homemade sausage. I'll definitely make this again. Next time I might play with the recipe a bit and add jalapeño/cheddar as others have suggested, or add crushed red pepper.
