Pre-Packaged Smoothies

I have been portioning my fruit for my morning smoothies for a long time now. I add all the same things as this recipe, except I add whey protein powder also. To save a step, b4 freezing, you can just add the yogurt to the bag of fruit instead of getting the muffin tin dirty, I buy the liter size of Greek yogurt and portion it out. It is alot thicker and richer than regular yogurt.

Slow Cooker Pinto Beans

I used the seasonings in this recipe and thought the flavor was delicious. I did use a ham shank instead of diced ham, and kale instead of bell pepper and added carrots too, since thats what I had on hand. I the veg up in the FP and added the last 2 hrs of 7 hrs in the slow cooker. My son came home to these and hamemade bread and butter..a comfort meal made in heaven...yummm

G's Tres Leches Cake

I have heard of tres leche cakes for a long time..but never tried one..till now. I am an instant fan..this cake is the best thing I have put in my mouth in a long time. I am picky when it comes to cakes and this one is worth the time and the wait for the 2 days to enjoy it. The only changes I made was to use a 12 oz can of cocont milk instead of the evaporated milk, poured the milk sauce on when warm, and put on the whip cream after it was refrigerated for 2 days. and topped it with toasted coconut. This cake reminded me of a coconut cream pie souffle'

Easy Weeknight Bacon Mac 'n Cheese

My mac n cheese lover in our house is my 11 yo grandson. He liked this for the most part, but not the red pepper. Since he doesn't like panko, he was glad I used my whole wheat bread crumbs mixed with a little butter and bacon fat..I didn't want to waste it since I sauteed the bacon anyway..hehe..the cheese flavor was very good in this dish.

Black Lemon Chicken

This recipe was a hit with me & my family. Next time I make this, and there will be a next time, I will roast the chicken at a higher temp so it will brown better. I used fresh rosemary and thyme which gave the chicken great flavor. The wilted romaine salad under it was very good also.

We really liked this salsa..I liked the ease of not having to roast the tomatoes and peppers. I only had jalapenos and habinaros so that is what I used for the peppers. We like ours more finely chopped so I made it in the food processor. It was perfectly flavored.

Easy Weeknight Beef Stroganoff

For economic reasons I used boneless chuck steak sliced thin and browned. Added onions, garlic and I added sliced portabello mushrooms and cooked for aa few minutes. I added water,covered, and simmered until almost tender (1hr)and most of liquid was evaporated. Then I added the portabello mushroom sauce and simmered for another 20 min until thickened. Added the sour cream and served over egg noodles.We all loved the flavor of this entree.

Fresh Corn and Zucchini Pancakes

I thought these were amazingly good but gave them 4 stars for the following reason. I made them and cooked a cpl to see how they tasted, but they were bland and in need of seasoning. I added about another 1/3 cup of fresh parmesan, 1/2 tsp season salt, 1/2 tsp lemon pepper, & 1/2 tsp garlic powder, With these changes they were awesome.

Italian Chicken Sausage Stuffed Portabellas

I made this recipe with large cremini mushrooms since I felt the portabellas would be wasted. Only 1 other person in my house likes mushrooms. I think the creminis worked better anyway and they're not as expensive. I didn't have the cream cheese spread so made it myself with 1/2 of the cream cheese and added basil, oregano, and garlic. I chopped the cremini stems and sauteed them with the sausage (1/2 the ammt also) I find if u skin the sausage b4 browning, it isn't as chewy. I added green onions as I didn't have chives. The texture was too creamy for me so I added some Italian dry bread crumbs, which helped improve the texture and flavor alot. After these changes..they tasted great.

Pumpkin Pie Cake III

This pumpkin cake was very good, altho I think I like my recipe that uses a 29 oz can pf pumpkin better, as it has a better pie filling to topping ratio & makes it more pumpkin pie-ish. I like the use of brown sugar and more spice than the norm. I always dbl the spice in my pumpkin pie. Since I only had a 15 1/2 oz can of pumpkin, this is the recipe I used. I didn't have pecans or walnuts so used sliced almonds instead and added flaked coconut for some crunch. I cut the melted butter back to 3/4 cup. It was served with fresh whipped cream and it tasted delicious.

Caramel Corn Treat Bags

This caramel corn was very good and so muuch easier than making my usual popcorn balls...no burnt hands either..I do like the flavor of my Pop's molasses popcorn balls a bit better tho. These were a big hit at my Halloween party.

Skillet Zucchini Cornbread

We really liked this cornbread. It was a great side with our tortellini soup. I have never seen self rising cornmeal in California, so used regular and added baking powder and soda. I added a bitmore sugar and green onions were all I had, so used those instead. They worked and made the flavor yummy. I will make this again.

Brazilian Bananas

I took the other reviews into consideration when I decided to make this recipe. Since alot of reviews said the sauce was liquidy and too sweet, I cut the sugar back to 1/3 cup and simmered the orange sauce in a saute pan until syrupy. I then sliced the bananas on the diagonal, and heated in the sauce for a couple of minutes. This recipe can be done completely on the stove top, no baking required. I served it over vanilla ice cream and topped it with toasted coconut. My family all loved it, and my son said it was almost as good as his favorite dessert, banana cream pie. It's a keeper and I will be making this again.

Easy Yummy Chinese Chicken Salad

This recipe was really good after a few tweaks. I felt the dressing needed some sweetness so I added some Stevia. I used fresh grilled chicken breasts and added mandarin oranges. For convenience, I used pre packaged cole slaw mix and shreaded romaine hearts for the lettuce.

The flavor of these beans was very yummy. I added some smoked sausage and a little more bacon...and used black beans instead of the garbanzos. We smoked the bean in the smoker along with 2 racks of ribs for Memorail Day 2012.

Roasted Sweet Potatoes & Onions

I thought these sweet potatoes were delicious. I had so much going on with the dinner I was making that I forgot to add the almonds. I'm sure they would have added a nice crunch, but they weren't missed in making this dish taste very good. Instead of dried thyme, I used fresh and also added some fresh rosemary. I loved the carmelized onions and baked them on a cookie sheet uncovered so the sweet potatoes & onions could carmelize.

Cornbread Stuffing with al fresco® Sweet Apple Chicken Sausage

This recipe for stuffing is very similar to my usual Thanksgiving dressing I have made for about 20 yrs. I usually use bulk breakfast sausage tho. I made the recipe according to directions except I found it needed alot more broth(at least 2 cups) I also found it a little too sweet since I used Jiffy cornbread mix instead of making a homemade non sweet cornbread for this recipe..and also bcuz of the sweet sausage. I figured out I like the Al Fresco sausages better, and they are not so chewy, if you remove the skin. It makes them much better in my opinion. Good recipe tho and it has all the flavors I love in a dressing.

Black Bean Brownies

I do aqua exercise, and took these and Dr. Oz's black bean brownies to the pool for everyone to do a taste test. These won!. I made a few changes to make them healthier. I used 2 egg whites and one whole egg, 3 Tbl coconut oil instead of veg oil, 1/2 cup cocoa pdr as some reviewers did(it was perfect), 1/4 cup granulated fruitose & 1/2 cup Stevia in the Raw instead of sugar, and used a glaze & mini choc chips on top. I baked them in mini muffin tins for 14 minutes. They were a big hit. I will be making them again.
