Charley's Slow Cooker Mexican Style Meat

I made this according to the recipe..except I wanted it a lil' milder so omitted the hot pepper sauce, used the juice from the diced chilis, more water, and cumin..it was just spicy enough for us. I made tacos out of it tonite...maybe we will have burritos with the leftovers. Thanx for sharing this recipe..it has great flavor and is so tender and juicy.

Italian Chicken Sausage Stuffed Portabellas

I made this recipe with large cremini mushrooms since I felt the portabellas would be wasted. Only 1 other person in my house likes mushrooms. I think the creminis worked better anyway and they're not as expensive. I didn't have the cream cheese spread so made it myself with 1/2 of the cream cheese and added basil, oregano, and garlic. I chopped the cremini stems and sauteed them with the sausage (1/2 the ammt also) I find if u skin the sausage b4 browning, it isn't as chewy. I added green onions as I didn't have chives. The texture was too creamy for me so I added some Italian dry bread crumbs, which helped improve the texture and flavor alot. After these changes..they tasted great.

World's Best Peanut Butter Fudge

My family & friends all loved the flavor and smooth texture of this fudge..altho it never set up like fudge. I'm no sure what happened since I even cooked it a cpl minutes longer than directed. Even after refrigerating it overnight, it was more a gooey taffy consistancy...so I wrapped it in wax paper to pass it off as taffy.

Roasted Sweet Potatoes & Onions

I thought these sweet potatoes were delicious. I had so much going on with the dinner I was making that I forgot to add the almonds. I'm sure they would have added a nice crunch, but they weren't missed in making this dish taste very good. Instead of dried thyme, I used fresh and also added some fresh rosemary. I loved the carmelized onions and baked them on a cookie sheet uncovered so the sweet potatoes & onions could carmelize.

Black Lemon Chicken

This recipe was a hit with me & my family. Next time I make this, and there will be a next time, I will roast the chicken at a higher temp so it will brown better. I used fresh rosemary and thyme which gave the chicken great flavor. The wilted romaine salad under it was very good also.

Mystery Salad

I had no lemon pudding mix and from the sound of the reviews, I'm glad i didn't. instead I used sugar free cheesecake pudding mix, some grated lemon zest and the juice of 1 lemon, alomg with just the pineapple juice from pineapple tidbits. My family liked the flavor but thought it was too loose. I agree with another reviewer that it would be better with Cool Whip or whip cream folded into it. All in all it was good and a change from my usual fruit salad.

Cornbread Stuffing with al fresco® Sweet Apple Chicken Sausage

This recipe for stuffing is very similar to my usual Thanksgiving dressing I have made for about 20 yrs. I usually use bulk breakfast sausage tho. I made the recipe according to directions except I found it needed alot more broth(at least 2 cups) I also found it a little too sweet since I used Jiffy cornbread mix instead of making a homemade non sweet cornbread for this recipe..and also bcuz of the sweet sausage. I figured out I like the Al Fresco sausages better, and they are not so chewy, if you remove the skin. It makes them much better in my opinion. Good recipe tho and it has all the flavors I love in a dressing.

Butterscotch Banana Drops

This is a really good cake type cookie and I think they taste best still warn from the oven with a glass of milk. I didn't have enough pecans so subbed almonds for some of the nuts. I also didn't have dates so subbed some craisins in part of the dough. In my opinion they were better without them. Next time I will try them with dates as directed. Thhis is a great way to use up too ripe bananas.

Apple Pecan Corn Bread Dressing

This is a very good dressing recipe. I have been looking for one that added all the flavors i love together and this one does. I added some sausage, fresh sage, and dried cranberries for another flavor dimention.

Italian Chicken Sausage Risotto

I couldn't find the raw Italian chicken sausage, so I used the sundried tomato and basil one. Being that it was already cooked it required less cookin time..so if I make this again and use the same sausage, I would brown and then add it back in the risotto the last 10 minutes. I added a little pepper and italian seasoning, fresh parsley to the risotto at the last. Served wiith parmesan, it was a big hit with my family.

Pineapple Angel Food Cake II

This was a very good cake. I like that it is lighter than most cakes and more diabetic friendly. I added areosol whip cream to the top(what I had on hand)..something I think added alot to the flavor, as it is not very sweet. I would make this recipe again.

Guinness® Corned Beef

I have made this recipe many times over the past 7 yrs since I first found it in AR. It is the best corned beef I have ever had. The brown sugar and beer mix with the saltiness of the meat while it cooks, and makes the best tasting broth ever. The coorned beef seems alot less salty tasting as well. I will never make corned beef any other way. The only change I make is I slow cook mine in my crock pot for about 8-10 hrs, remove the meat to rest so it can be sliced..I turn the CP up to high and add red potatoes, onion, baby carrots and cook for 30 min, then add cabbage and cook another 15-20 minutes.

Black Bean Brownies

I do aqua exercise, and took these and Dr. Oz's black bean brownies to the pool for everyone to do a taste test. These won!. I made a few changes to make them healthier. I used 2 egg whites and one whole egg, 3 Tbl coconut oil instead of veg oil, 1/2 cup cocoa pdr as some reviewers did(it was perfect), 1/4 cup granulated fruitose & 1/2 cup Stevia in the Raw instead of sugar, and used a glaze & mini choc chips on top. I baked them in mini muffin tins for 14 minutes. They were a big hit. I will be making them again.

Easy German Biscuits

I have seen recipe for Angel biscuits for a long time now. I have wanted to try then since my biscuuit making is not my crowning glory. I can bake anything else..but biscuits always turn out like hockey pucs. This recipe turned out great, light, moist and tender. Even tho I didn't do exactly as the recipe sez. My homemade turkey soup was simmering away when I decided to make biscuits to go with it. I decided on this recipe and instead of refrigerating them for 12 hrs. I let them rest and rise for about 30 minutes. I also used 1/2 white whole wheat flour and q/w AP flour. It still turned out well and was a very good biscuit. My family was really surprised when they bit into them..lol..not mom's usual hockey pucs.

Corn Pudding I

I have been making corn pudding or casserole for a long time. I really liked this recipe for the most part. I had no red bell pepper so used chopped pimento instead & I used green onions instead of yellow onion. I also added some bacon and cheddar cheese to the topping. Its a recipe I will make again.

Pumpkin Pie Cake II

I read alot of reviews b4 making this recipe. i can't believe it got so many good reviews. For a 29 oz can of pumpkin, 1/2 cup of sugar was no way sweet enough for the filling..I had to add 1 cup of sugar and 13 cup of Stevia to get it sweet enough. There was also not enough evaporated milk for the ammt of pumpkin..I added the whole 12 oz can. I also had to add 2 teaspoons of pumpkin pie spice to make the flavor better. The crust, after taking out 1 cup for the topping had way too much butter in it. I would have used 1/4 cup instead of 1/2 cup and it would have been plenty. The topping was a nice addition to the recipe. I added coconut and almonds to it and it was really good. It turned out great with my tweeks..but the recipe as written wasn't good.

Fiber One® Chocolate-Peanut Butter Haystacks

I read alot of reviews that had some unfavorable comments, so was a little leary to make these. I made 2 versions...the original but used 1/2 semi sweet chocolate and 1/2 dark chocolate, added walnuts and a pinch of coconut on the top. They were good but I should have stuck with the semi sweet, as my family thought they tasted too rich with the dark chocolate..but they liked the walnuts and coconut in them. The other version was made with white chocolate. I added sliced almonds and craisins. Those were a hit and were the perfect blend of flavors with the Fiber One, almonds, & the tartness of the craisins & it cut the sweetness of the white chocolate. I made both batches with 1/2 the amount of chocolate and Fiber One and made them smaller. I got 4+ dozen out of a 1/2 recipe of each kind. I would make these again for sure. My 10 yr old grandson gave them 9.7 out of 10 stars.

Pumpkin Pie Cake III

This pumpkin cake was very good, altho I think I like my recipe that uses a 29 oz can pf pumpkin better, as it has a better pie filling to topping ratio & makes it more pumpkin pie-ish. I like the use of brown sugar and more spice than the norm. I always dbl the spice in my pumpkin pie. Since I only had a 15 1/2 oz can of pumpkin, this is the recipe I used. I didn't have pecans or walnuts so used sliced almonds instead and added flaked coconut for some crunch. I cut the melted butter back to 3/4 cup. It was served with fresh whipped cream and it tasted delicious.

Thanksgiving Meatloaf

I wanted to use up my leftover holiday gravy, dressing and dried cranberries from the freezer, so decided to try this recipe with these changes. I used the ground turkey, eggs, some dressing(since it already had moisture add, I omitted the milk), then added dried cranberries and added more seasoning & sage, as many reviewers recommended. After baking, I served turkey gravy over it with mashed potatoes, the rest od the dressing, & a side salad. It put me in the mood for Thanksgiving dinner so I made Pumpkin Pie Cake III from AR for dessert. yummm!

Slow Cooker Beef and Mushroom Stew

I am giving this recipe 4 stars because there were several changes I made to the recipe. There was not enough salt as some reviewers said..so I seasoned the meat with salt, pepper and garlic powder before coating with flour and browning in the oil(not enough). I didn't have a roast or stew meat so used carne adada meat(thin and cut in strips) so it only took 3 hrs to cook, 1 on high and 2 on low...I also didn't have the condensed soup, red wine, pearl onions or regular mushrooms or carrots, so I used beef broth, sherry wine, chopped onions and portabello mushrooms and baby carrots. I found it needed alot more liquid than stated. I was really glad I had homemade beef broth on hand. It smelled amazing while it was cooking and tasted great for dinner. I served it over egg noodles and the family all loved it.
