Sweet Italian Chicken Sausage and Tortellini Soup

I have a bad cold, and decided to make some soup to help me feel better...even tho it was 95 degrees today.LOL I only had one pkg of Al Fresco sausage and it was the tomato & basil meatballs. I used those in this soup and it was a very good sub. I cut them up, browned them first, set aside and made the soup. I used kale instead of spinach, since that is what I had. My family all loved it..with the exception of my grandson..He liked it all but the kale....which he kept calling "that seaweed stuff" hahaha. I served it with Skillet Zucchini Cornbread from AR. That was very good too.

Easy Weeknight Beef Stroganoff

For economic reasons I used boneless chuck steak sliced thin and browned. Added onions, garlic and I added sliced portabello mushrooms and cooked for aa few minutes. I added water,covered, and simmered until almost tender (1hr)and most of liquid was evaporated. Then I added the portabello mushroom sauce and simmered for another 20 min until thickened. Added the sour cream and served over egg noodles.We all loved the flavor of this entree.

Brazilian Bananas

I took the other reviews into consideration when I decided to make this recipe. Since alot of reviews said the sauce was liquidy and too sweet, I cut the sugar back to 1/3 cup and simmered the orange sauce in a saute pan until syrupy. I then sliced the bananas on the diagonal, and heated in the sauce for a couple of minutes. This recipe can be done completely on the stove top, no baking required. I served it over vanilla ice cream and topped it with toasted coconut. My family all loved it, and my son said it was almost as good as his favorite dessert, banana cream pie. It's a keeper and I will be making this again.

Loaded Bacon Potato Pizza

I made this for breakfast for my family. They were very happy to wake up to the smell of pizza baking. We all liked it alot but I thought the cheese sauce needed to be thicker and more cheesy tasting. I used whole wheat pizza dough from Winco, and frozen potato rounds, as I couldn't find refrigerated ones. I prebaked them to get them crispy before putting on the pizza.I also baked cut up bacon on the other end of the baking sheet, instead of using bacon bits. It was very good and got a thumbs up from everyone.

Easy Weeknight Chicken Pot Pie

I made a 10 inch pot pie, so I doubled the veggies and chicken. Fresh carrots, green beans, corn, onion, and few leftover mixed veggies were used. I made homemade crust with white whole wheat flour. Also skipped the poultry seasoning since I thought the flavor was good without it. The creamy garlic sauce gave a great flavor to this chicken pot pie. My family all loved it. I will make this again.

Cheese-Stuffed Giant Meatballs

My family all really liked this recipe. I didn't have string cheese, and after reading reviews about it not melting, I used cheddar. I also added a little extra s&p and garlic. I used 1 1/2 lbs ground beef to make 12 mini meat loaves. They needed an extra 15 minutes in the ovento get done to my liking. I thought the fire roasted tomato sauce had good flavor.

Pre-Packaged Smoothies

I have been portioning my fruit for my morning smoothies for a long time now. I add all the same things as this recipe, except I add whey protein powder also. To save a step, b4 freezing, you can just add the yogurt to the bag of fruit instead of getting the muffin tin dirty, I buy the liter size of Greek yogurt and portion it out. It is alot thicker and richer than regular yogurt.

Fresh Corn and Zucchini Pancakes

I thought these were amazingly good but gave them 4 stars for the following reason. I made them and cooked a cpl to see how they tasted, but they were bland and in need of seasoning. I added about another 1/3 cup of fresh parmesan, 1/2 tsp season salt, 1/2 tsp lemon pepper, & 1/2 tsp garlic powder, With these changes they were awesome.

German Chocolate Caramel Bars

This was a great recipe after a cpl of tweaks.After baking the bottom, I dobbed on a can of Dulce de leche and then made a cheesecake filling and poured it over the top. Then I topped it with the topping, baked it and topped it with chocolate chips and powdered sugar. sooo yummy..specially with a scoop of vanilla ice cream.

Scallop and Shrimp Kabobs

I grilled these kabobs for Father's Day and they were a big hit. It was a last minute decision and I wanted to save a trip to the store..so I skewered what I had: shrimp, lobster, sausage, pineapple, & zucchini. I wish I had the peppers to add to them tho. The marinade has great flavor.

Florida Key Lime Pie

I loved the idea of this cheesecake pie being like the lemon cheesecake ones from the 80s, but lime. I was refreshing and delicious. Everyone loved it at our Father's Day BBQ. We love fresh whip cream with vanilla bean paste so I made it thick and it was perfect.

Easy Yummy Chinese Chicken Salad

This recipe was really good after a few tweaks. I felt the dressing needed some sweetness so I added some Stevia. I used fresh grilled chicken breasts and added mandarin oranges. For convenience, I used pre packaged cole slaw mix and shreaded romaine hearts for the lettuce.

The flavor of these beans was very yummy. I added some smoked sausage and a little more bacon...and used black beans instead of the garbanzos. We smoked the bean in the smoker along with 2 racks of ribs for Memorail Day 2012.

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

We usually smoke our ribs but decided too late to have ribs to do that. I decided on this recipe bcuz it is how I make ribs if i don't smoke them. Cook them in the oven and then grill the sauce into them until it carmelizes. I loved the rub and the sauce ingredients. They were a hit with my family as well. Thanx for sharing ur recipe Scott.

Turkey Mushroom Tetrazzini

The flavor of this dish was very good. I have never heard if the garlic spread listed so I used savory garlic Philly cooking cream. and evaporated milk in place of the cream. It all worked out perfectly. It was a hit with my family. I think i would have preferred a crumb topping with the parm and almonds added to it though. Next time I will try that.

We really liked this salsa..I liked the ease of not having to roast the tomatoes and peppers. I only had jalapenos and habinaros so that is what I used for the peppers. We like ours more finely chopped so I made it in the food processor. It was perfectly flavored.
