Cream Cheese Sweet Almond Wheat Bread

Reviewed: Aug. 3, 2012
I was looking for a bread that would be great with a cup of coffee in the morning so I decided to use this recipe but just add more sweetness. I doubled the brown sugar and honey and instead of putting the almonds into the dough I mixed them with 1/2 cup of brown sugar and about 1 tbls of corn oil and sprinkled it all over the top and sides of the dough before baking it. I added 1 tsp. of pure almond extract to the dough. This was exactly what I was looking for! It was very slightly sweet and crunchy on top and I love the tang from the cream cheese in the bread! I didn't do a second rise. I just let it rise for 1 hour in a greased 8"x8" baking dish with my almond/sugar topping, then just baked it at 350 degrees for 55-60 minutes! My house was filled with the lovely aroma of sweet almond bread! Perfect! I will be making this ALOT!

Shot Glass Cream Cheese Dessert

Reviewed: Aug. 2, 2012
I love shot glass desserts! I often order them in restaurants, so I was happy to try this one! I tweaked it to become an 'Almond Joy' flavored dessert because I'm on an 'Almond Joy' candy bar kick lately! I only made 2 servings. I lightened up the cheese by using 1/2 cream cheese(fat free) and 1/2 ricotta cheese. I also added a few drops of almond and coconut extracts to get that 'Almond Joy' flavor. I also topped it with sweetened shredded coconut and chocolate chips. This was soooo good that I wished it was larger than a shot glass! YUM!

Quick and Easy Tuna Casserole

Reviewed: Jul. 8, 2012
I never made a tuna casserole because the thought of eating warm, canned, tuna fish, with pasta, just didn't appeal to me. I finally decided to try it because I had 2 cans of tuna fish that were taking up pantry space for way too long! To my surprise, I loved it! I did make some changes for personal preference. I added 1 tsp. liquid smoke and 2 large cloves of crushed garlic. I love the slight smokey flavor with the tuna. I sauteed the onions and garlic in 1 Tbls of butter. I also used cream of chicken soup instead of cream of mushroom. I will definitely make this again! Thanks for helping me overcome my tuna casserole fear!

Mango Sorbet

Reviewed: Jun. 19, 2012
I made this but had to make some alterations because I only had 1 mango, no simple syrup and not enough lime juice. I used 2 bananas to make up for some of the missing mango, as another member suggested...and I used 3/4 cup light corn syrup, as suggested by another member, instead of simple syrup because I didn't have enough sugar to make simple syrup. And I only had 2 tablespoons of fresh lime juice. But it still worked fine because this was delicious! I can't wait to experiment with other fruits!

Stabilized Whipped Cream Icing

Reviewed: Jun. 18, 2012
This worked great! I love whipped cream as a frosting for cakes but it would always melt so quickly! The gelatin really does the trick! The whipped cream holds up really nicely using this recipe! Unfortunately my decoratings skills don't do this recipe justice! lol!

These were very good and so easy to make! I used melted chocolate chips instead of the 'Magic Shell' because that's what I had available. My family gobbled these up real quick! I will make these more often.

Sweet Basil and Oregano Bruschetta Chicken

Reviewed: Jun. 6, 2012
This was the first McCormick Gourmet spice mix I tried...and it was love a first bite! After trying this delicious dish, I couldn't wait to try the others! The spices are blended perfectly! Not too over powering! And my house smelled sooo good while this was cooking! I always double these McCormick recipes whenever I make them because I always cook a full pound of pasta for my family.

Pepperoncini Beef

Reviewed: May 24, 2012
I make this often...we call it 'Amazing Beef Sandwiches'...it's that good! I use a rump roast and sliced jarred pepperoncini (Mild). I serve it on kaiser rolls! The beef has so much flavor and just melts in your mouth! I make beef barley soup with the leftovers! This is a must try recipe!

Roasted Fan-Shaped Potatoes

Reviewed: May 23, 2012
This is a fun way to serve a baked potato! There's alot of prep involved because of all the slicing! But I like it because it's unique! I didn't use the breadcrumbs and I used alot more salt! I removed 1 slice of potato from each potato to give the potato more room to fan out! And I only needed to bake it fot 1 hour. Placing a wooden spoon on each side of the potato during slicing is a great idea, as mentioned by other members! It really helps to make the slices without cutting through the bottom on the potato! I served mine with fresh chopped chives and some sour cream on the side!

This was such a quick and easy cake! I made it as written except for the topping! instead of the crumb topping, I made a caramel drizzle by melting some caramel candies in the micro with a little milk. Worked great!

Cajun Spice Mix

Reviewed: May 14, 2012
I just made this to use in a Jambalaya recipe and it worked great! I made it as written except I didn't add the red pepper flakes...the cayenne was enough spice for me! This was perfect...the Jambalaya had just the right amount of heat with this spice mix! Not too spicy!

One Bowl Chocolate Cake III

This was perfect!!! I did as others suggested and increased the cocoa powder to 1 cup. I baked this in a 9x13 baking pan for 40 minutes. This cake is delicious in every way...moist, rich, dense, but not too much of each! The perfect balance of all! I topped mine with a peanut butter chocolate ganache...heavenly!!!
