Italian Love Cake

I made this exactly as written except for the baking time. Mine was done by 60 minutes using a glass baking dish. 75 minutes is way too long. I didn't top mine with the pudding frosting because I thought it would be too sweet. I just added a dollop of whipped topping to each piece as I served it. I wish the sweetened ricotta layer had more flavor. I think I'll use almond extract next time and some shredded coconut to turn this into an 'Almond Joy Love Cake'. And I agree with the other reviewers, this tastes much better after it chills in the fridge overnight. I tasted it warm and it was not as good. It also becomes more moist after it's refrigerated. A fun recipe!

Hard-Steamed Eggs

Maui Girl tried this method and showed it to me...I'm so glad she did! It worked perfectly. What I also love about this method is that you don't get a green edge around the yolk. Thanks BD...you rock!

Bruschetta Chicken

A perfect bruschetta recipe! I love the cold bruschetta on top of the warm grilled chicken cutlet that is topped with melted mozzarella! I'll also be using this bruschetta recipe on top of slices of toasted Italian bread! Great recipe Mazola...thanks!

Slow Cooker Mexican Beef Stew

This was perfect! And I never use my slow cooker without the Reynolds liners! A 'must have' in my kitchen! This stew has tender beef chunks bathing in a Mexican style broth...yum! Very hearty and satisfying! I made it as written except I doubled the garlic because I'm a garlic lover! I think next time I'll also double the beef because I found myself wanting more. I topped mine with green onions and shredded cheddar cheese. I served it with a mound of white rice in the center of each bowl, as you can see in my photo. I will definitely be making this again!

Apple-Cinnamon Farfel Kugel

This was very tasty and very easy to make, but I've never had farfel kugel before, so I don't have anything to compare it to. I would have liked it to be a little drier. It reminded me of a more textured applesauce. It was very sweet. If I made it again I would use more matzo farfel and less sugar.

Grilled Masala Chicken with Vegetables

This was okay but needs more salt. After tasting it I topped it with salt as I was eating this! For some reason most of the onions and zucchini burned. My grill was set to medium and registered 450 degrees F. I grilled the foil packs for 22 minutes. I seasoned the yogurt sauce with parsley, dill, salt, pepper, garlic powder and a splash of cider vinegar. I'm so glad I did that because I think it helped.

These were so delicious! I used shrimp instead of salmon and I added salt, pepper and a clove of crushed garlic to the yogurt sauce. Such a nice fresh, light, easy meal that was ready in less than 30 minutes. I'll be making this more often!

Clone of a Pretzel Dip

This was so good that I wanted to just drink it! And don't bother making 1/2 the batch because you will be back in the kitchen making more within minutes! This doesn't make a large amount, so just go for it! I didn't have mustards seeds so I omitted that. I also added a few rings of jarred jalapeno for some heat. I mashed them and added it to the other ingredients. This does thicken up when chilled for a few hours...if you can wait that long! I'll be using this dip for soft pretzels next time. Amazing Muffin Cups

This tasted very good but just wouldn't brown up for me! I put it under the broiler but that just browned the top, not the bottom and sides. Mine also stuck to the pan. I doubled the salt & pepper for the hash browns and I also added salt & pepper to the egg mixture. I used 1/2 of a 32 oz. bag of hash browns, which was just enough for 12 muffins. This was very tasty and the sausage inside was a nice surprise for my family!

Pork Chops Italiano

This was very good! I made some slight tweaks such as seasoning the mushrooms with salt & pepper. And also seasoning the pork chops with salt & pepper before frying. I didn't add any water. I just doubled the diced tomatoes instead. I topped it with shredded mozzarella and served the pork chops on a bed a mashed potatoes! YUM! This reminded me of an Italian style pork stew. I will definitely be making this again! A keeper for sure! Thanks Lutzflcat!

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

Holy Moly...this is a perfect turkey burger recipe! Moist and full of flavor! I had to tweak the spicy sweet mayo sauce because I didn't have all the ingredients, but I made the burger as written. I doubled the burger ingredients and was able to make 8 nice sized burgers. This is the second burger recipe I've tried from Occasional Cooker and I love this one just as much as her Asian style burger! You are my 'Burger Queen'...lol! Thanks again for another winner!

Chicken and Broccoli Fettuccini Skillet Dinner

This was very good and very easy to prepare! I used peas instead of broccoli because my kids won't eat broccoli. I also added 1/2 tsp. liquid smoke. This was enjoyed by everyone...no whining from either of my two girls! Thanks Mazola!

Awesome Yogurt Biscuits

I just made these when I found them on another website. I LOVED them! I used a 6oz. container of cherry yogurt for a slightly sweet biscuit. I was able to make 8 biscuits. These are so light and fluffy. Perfect served warm with butter. I enjoyed 3 of these with a cup of coffee! I'll be doubling the recipe next time! I can't wait to try other flavors such as apple/cinnamon or blueberry or chocolate! The flavor choices are endless! This is a 'must try' recipe!

Cinnamon Vanilla Granola

This was very good! I made this into a yogurt parfait as suggested by Mazola. I made the granola using peanuts instead of almonds and I used flaxseed instead of wheat germ. I added dried blueberries instead of raisins. I served this with peach yogurt and frozen cherries. A very fruity parfait with good granola crunch...I loved it! You can really customize this recipe to suit your taste!

This was a very good easy snack! I tweaked it slightly. I didn't have green onions and I baked these instead of frying. I just VERY lightly brushed them with corn oil and baked them for 12 minutes at 350 degrees.

This was very good! Perfect for when you're tired of the same old, same old dips! I made it as written but I didn't use the black olives. I just doubled the green olives instead. I also added more mozz on top because 1 tablespoon just wasn't enough for me. I served these with Ritz garlic butter crackers...yum!

RITZ Spicy Asian Chicken Wings

This was so very good! I used 4 chicken cutlets instead of chicken wings! I cut the 4 cutlets into 36 strips then followed the directions as written using 2 sleeves of Ritz crackers. I baked them instead of frying. 400 degrees until cooked through...about 20 minutes. My family gobbled these up super fast! Perfect for a snack or a main course.
