Rockin' Salsa

I do love this recipe so I use it every year for using up my garden goodies. I add jalapenos for a bit of heat, swap out the powdered garlic for fresh and omit the brown sugar. S&P to taste. It is requested by friends who ask, "Did you make the salsa this year?".

Basic Chocolate Buttercream Icing

This butter cream icing is great! Used it for in-between the layers of a white cake. I sifted the cocoa and confectioners' sugar and I added a pinch of salt. Mmmmm

Mendi's Favorite Orzo

This side dish was well received in my house. After reading the reviews for more flavor I decided to use fresh onion and garlic instead of powdered and also to cook the orzo in chicken broth. Had one serving leftover which wasn't bad warmed in the microwave. Nice side that went well with AR recipe Roast Sticky Chicken-Rotisserie Style

Quick Chicken and Corn Chowder

I loved this easy to make chowder. The cheese is an excellent addition. I seasoned the chicken breast with the olive oil, S&P and garlic powder then baked it in a 350 degree oven for 35 minutes. I diced it and tossed it with all the other ingredients in the slow cooker on low until the onion and pepper were soft. Only had a yellow pepper which added a nice sweetness. Served with garlic bread this was a nice hearty meal.

Buttery Alfredo Sauce

Loved this recipe ~ So comforting, so filling. I halved this recipe and it was plenty for 3/4 of a lb of pasta. I served Blackened Chicken with it. So full I couldn't move a muscle afterward. Five Stars!

Stuffed Mushrooms II

Downeast Maine Pumpkin Bread

I've made this bread in loaf pans and found that it needed a few more than 50 mins to bake. Also halving this recipe made 48 perfect mini-muffins. Baked the minis in a 325 degree oven for about 15-18 minutes. I piped cream cheese frosting on them. Delicious

Quick and Easy Cherry Bars

The batter for these bars is thick so "spreading" the top layer over the cherries was almost challenging for me. They came out pretty I thought. The texture is more like a coffee cake than bars in my opinion so for me this begs for a buckle type topping with toasted almonds for a bit of crunch. I am not a big fan of canned cherries but certainly could have used another fruit pie filling. These were ok.

Boilermaker Tailgate Chili

I found this recipe easy to make and it filled quite a few bellies. I had to use white beans because that was the only kind in my pantry. It was better the next day which is great because I made it ahead. Paired this with jalapeno corn bread.

Puff Balls

Liked these for a sweet treat on a Sunday morning. I simply cut the biscuit in half before frying. Most likely due to the way I cut them I had to lower the temp of the oil to 350 degrees to ensure they cooked all the way through without burning on the outside. Made chocolate icing to spread on them and then added chocolate sprinkles. Yum fresh hot "doughnuts"!

Nana's Barbeque Sauce

I tried this because I was in a pinch and I am glad I did. With no BBQ Sauce in the pantry using the ingredient search I decided on this recipe. Cut the brown sugar back a bit and used cider vinegar. We liked it.

Homemade Pizza Sauce from Scratch

A nice way to use up an ubandance of romas this season. Used my food processor for the first step. Decided to cut back the sugar a tad and it was still a sweet sauce. After simmering I used my emersion blender for step three. Threw in some dried basil and oregano. I advise cutting back the sugar to taste. Enjoy!

No Roll Sugar Cookies

I like these cookies. Kinda a mix between a shortbread and a sugar cookie. I decided to add the ingredients you would find in Nestle Drumsticks by adding Nestle's Goobers (chocolate covered peanuts) and crumbled sugar cones covered in milk chocolate.

Plum Blueberry Upside Down Cake

When plums are in season this recipe always comes to mind. The outcome is impressive so don't tell anyone how easy it is to prepare. Serve with a dollop of fresh whipped cream and the Oooos, Ahhhs and Mmms won't cease till the last bite!

Best Steak Marinade in Existence

Excellent marinade plus I always have these ingredients on hand. After cooking the steak to a nice med-rare I let it rest and then served with basil butter. Serve on Foodies this one is a winner!

Slayer's Sweet, Tangy, and Spicy Kabobs

We loved loved loved these Kabobs! The only thing I changed was to use chili sauce vs the hot pepper sauce in the marinade because the bottles are identical and I didn't have my glasses on! Doubled the marinade. One half I poured into a sauce pan to thicken on the stove top with two tsps of cornstarch. When I cut up all the veggies/meat I skewered them right away while I had the mess out. Then I put the kabobs into a 9x13 glass pan and poured the marinade over them. This way the kabobs were ready to go straightaway to the grill and there was no need to soak the skewers. Marinated overnight which produced moist flavorful chicken. Brushed the kabobs with the thickened marinade while grilling. Grilled the maraschino cherries and the pineapple chunks on separate skewers. Delicious. The marinade is sweet and spicy. Served over white rice. Fantastic.

Butterfinger Cookies

These cookies sure do taste good. They spread out a lot while baking causing them to come out too thin. I baked them in a 350 degree oven, used parchment paper and took them out a bit under-baked. Used my cookie scoop, floured, because the dough was sticky. The cookies are thin so I thought not the prettiest but nonetheless we ate them right up.

Chef John's Peanut Butter Cookies

Love PB Cookies and these are no exception. I added mini chocolate morsels. Using my cookie scoop these were a breeze to make. I like mine a tad undercooked when the edges are just starting to brown
