Best Marinara Sauce Yet

Very good, a little lemony but I am wondering if my eggplant was small? I added a good bloop of some vegan mayo and that smoothed the flavors together very nicely. Thanks!

Vegan Pancakes

WOW YUMMY. I was out of eggs and the kids wanted chocolate chip pancakes so I quick looked up vegan pancakes and this was on top so I gave it a whorl. Last time I tried one they were all rubbery and gross so I wasn't expecting much - WOW five stars! We added chocolate chips and bananas. I also mixed some vanilla soy milk in for the water to up the nutritional content.

Cinnamon Pumpkin Waffles

Super yummy! I even had to make some subs since I was out of wheat germ (used hemp seed) and threw in a banana instead of the sugar. The kids raved, and the hubby was impressed. Great flavor, thanks so much!

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker

Very Yummy! It is true this recipe will be only as good as your curry powder, don't skimp on this. I followed other reviewers recommendations and used a fresh onion with a teaspoon of salt and a clove of garlic. No coconut cream on hand so I used coconut milk. I cooked this whole deal in the oven in my dutch oven. Turned out fantastic!

Chocolate Zucchini Cookies

anyone who rated this poorly did something wrong or maybe it has something to do with the quality of the coca? I did add chocolate chips but this is a great recipe on its own! If you want to cut the fat, use egg whites only and use a banana instead of the butter, I also added some flax seed to up the nutritional value.

Quinoa with Peas and Parmesan

This was sooooooooo great! I simply used carrots instead of celery (not a fan)and doubled the tomatoes and peas and used olive oil. Scrumptious! I do agree that mushrooms would be lovely also.

Tofu Stroganoff

the flavors in this were excellent! I too doubled the dill and soy sauce. I also ran the cottage cheese, cream and onions/garlic through the food processor to have a smoother sauce. Be really careful to heat the mixture just through or it will do funky things. I also added some peas which improved the aesthetics.

Rhubarb Muffins

lovely muffins. I doubled the amount of rhubarb and added chocolate chips! For a low fat version, you can leave out the butter and vegetable oil and add one banana and egg substitute. My kids gobbled them up!

Lemon Orzo Primavera

This may be five stars cubed! I used spinach instead of zucchini but it really lends itself to a variety of veggies. I wasn't paying attention to how long it cooked, but I did have to add extra water. Also, as others suggested, I added some of the lemon juice. Thanks!

Zucchini Mediterranean Style

Lovely as is but I added chick peas and a good table spoon of Italian seasoning as well as about a teaspoon of dried basil and some extra garlic salt. Quick, healthy and tasty. Serve with a hot crusty loaf of bread.

Tempeh Ratatouille

Defiantly recommend adding more spices. I made it as is and it was pretty bland. The tempeh added a sort of strange texture to the dish that I liked but the family didn't. If I did it again, I would add more of the spices that the other reviewers added.
