Pumpkin Chili

Fettuccine with Roasted Tomatoes, Vegetables and Sausage

Delicious, easy recipe. I chopped and prepped the vegetables the night before and then tonight I just popped it into the oven, boiled the noodles, tossed and served. I was skeptical this would be good without a sauce, but the sausage (casings removed) and feta add great flavor.

Creamy Southern Shrimp and Cheese Grits

I enjoyed this recipe. I prepared exactly as directed and wished it had a bit more flavor, but overall it was a nice, comforting dish. Next time, I would add more cheese and maybe a little red pepper flake for some heat. I needed to add quite a bit of salt to add flavor. Perhaps I will try the recommendation of cooking the grits in chicken stock next time to see if that adds more flavor.

My family thoroughly enjoyed this recipe. I added a chopped red bell pepper and managed to sneak in some chopped spinach as well. The sausage added great flavor to the dish. We will make this again.

Easy Marinated Mushrooms

Very good. The sauce could make enough for eight packages of mushrooms. I only needed to cook my mushrooms on low for about three hours before they were done.

Apple-Feta Tossed Salad

As the other reviewers said, the salad combination is wonderful. The dressing is terrible. I wish I would have read through the reviews before I made the dressing. Even after I added a considerable amount of olive oil, I was left with a very strong salad dressing. I didn't mind it, but it wasn't fit for a crowd. Next time I'll add less white wine vinegar and mustard and add olive oil.

Spicy Yogurt Dressing

I enjoyed this recipe. I made it with fat free plain greek yogurt. I think this makes a very refreshing dipping sauce also. To make this a "spicy" dressing, you can add a 1/4 teaspoon to 1/2 teaspooon sriracha sauce.

Pineapple Salsa

I like this as a garnish for grilled fish or chicken. I added mango in an attempt to sweeten it up a bit. The flavor really depends on having sweet fresh pineapple. I will make this again.

Avocado Dip II

Very good. I still prefer guacamole but as the other reviewers said, this is a good recipe for those that aren't crazy about avocados. I recommend adding the salt to taste as 1/2 teaspoon left mine a bit too salty. I used the dip as a sandwich spread for a tex-mex style panini.

I think this needs more eggs (6-8) and less milk (1 cup). Otherwise, it was very good. It's so easy to make for overnight guests.

The Juiciest Hamburgers Ever

The burgers are very good but they tend to fall apart on the grill. Rather than marinade them in the juice mixture, I added 1/4 cup of it to the beef and added a slightly beaten egg and some bread crumbs to keep them together on the grill.
