Okay, okay......I KNOW this is the day before the big night, but I STILL have no idea what to make for New Year's Eve.  We used to have an "appetizer night" for New Years, but this year, I want to keep it real easy as I am hosting New Year's Day dinner here for the extended family… MORE

I teach music at a public school to kindergarten through 5th grade and I teach private piano lessons, so I don't have a lot of time to cook during the week. I am always looking for slow cooker recipes and quick, easy and healthy meals. My husband and I recently lost a lot of weight so low-calorie meals are must, although we do occasionally splurge!
My favorite things to cook
My family is super picky, i.e., one son won't eat mushrooms, another avoids MOST vegetables and the third one is a health nut, so I have a hard time finding recipes they all agree on. However, they all love Italian and Mexican recipes so I find myself gravitating towards those a lot!
My favorite family cooking traditions
Our biggest cooking tradition comes during the holidays. Ever since our kids were little, we always got together with the extended family and had an "appetizer feast." Everyone chooses an appetizer and helps put them all together. It is a fun family event that everyone looks forward to!
My cooking triumphs
My latest cooking triumph was Magarita Bars which I just made a few days ago. I found this recipe in our local newspaper and we just had to try it. They were delicious and easy to make as well.
My cooking tragedies
Last New Year's Eve I made a new Italian dish that called for polenta. I am not sure if I just didn't get good polenta or if we just don't care for it, but it was NOT good!

Waikiki Meatballs
This was not a good recipe. The meatballs turned out mushy. I LOVE the idea of meatballs in a sweet teriyaki-like sauce but this is not the one you want. The ginger and milk just ruined any chance of good flavor. I should have know better. Next time I will make my own meatball recipe and put them in a different sauce as this recipe didn't make nearly enough sauce. Just very disappointing.

Best Chocolate Chip Cookies
GREAT recipe! I followed the ingredients to the letter. I did leave mine in the oven longer....I baked them for 14 minutes. They were still pretty blonde, but I hate crunchy cookies so I took them out. Once they cooled they hardened nicely with a slightly crunchy outside and chewy inside. PERFECT! Kudos to Dora!

Old Fashioned Chocolate Cake
I made this for my son's birthday and it is AMAZING!!! I didn't have butter milk so I used leftever whipping cream but I am sure regular milk would work also. It is SO moist!! My baking time was 35 minutes, not 30 but each oven is unique so just make sure you use a toothpick to check doneness! I didn't make the frosting as I had leftover buttercream frosting from the holidays. Next time I will try that recipe too.
