Chocolate Devils-A Chocolate Delight

     It all started with my husband saying, he needed some chocolate. Of course, I love chocolate, too. If you are a chocolate lover, you will love these Chocolate Devils. The recipe is from Ree Drummond, Pioneer Woman. She uses a well known recipe to make the Chocolate Devils known as Texas Sheet Cake. Or as my Mom used to call it, 20 Minute Cake. The small cakes measure 2 and 1/2 inches in diameter and have a cooked white frosting in the middle. Then, a chocolate ganache is poured over the top. This chocolate delight is very rich and makes a nice presentation.

     The cake recipe does not need any altitude adjustments at 5000 feet above sea level, so the recipe is high altitude friendly.  At higher altitudes, there may be some minor adjustments to the baking soda. See Baking with Altitude for a recipe at 7,000 feet above sea level.

     I did make a few adaptions. First, I lined the sheet pan with parchment paper and sprayed it with cooking spray. Second, I prepared another sheet pan with waxed paper and topped it with a cooling rack.  Third, my mom always sifted the flour, sugar, salt and baking soda. So, that is how I made this cake. Another change to the recipe is to add the water directly to the butter, cocoa and bring to a boil in small pan. I also used special dark chocolate cocoa. Pioneer Woman uses 3 cups of cream and 24 ounces of chocolate to make the ganache. I made the cakes with only 2 cups of cream and 18 ounces of semisweet chocolate squares. I basically doubled the Allrecipes Chocolate Ganache recipe and used vanilla extract instead of rum. I probably didn't need to make a double batch, as I had pleny of ganache left over. So, next time I will only make one batch of ganache.

     After making the Chocolate Devils you can eat the leftover scraps or make them into cake balls. I had some white frosting left over. So, I crumbled up the scraps. Then, I mixed about 1/4 to 1/3 cup of leftover frosting with the crumbles. If the ball doesn't stick together add more frosting. Form into balls and use a skewer to poke holes into the cake balls. Add a lollipop stick to each cake ball. Place in the freezer until firm. I used the ganache to dip the balls and sprinkled the cake balls with multi-colored sprinkles. Refrigerate until firm. Those look wonderful! I just discovered the Special Dark Chocolate Cocoa powder it makes everything richer. Your little devils look so festive. I got that garble on my blog before the current and couldn't get rid of it either.

These look delicious! I love chocolate, too, and the recipe for "Moist Chocolate Muffins" here on AR is really good and easy, for when you don't have a lot of time/energy but need "The Fix". (I like to use mini chips in them). Thanks for the high altitude reference, too - I'm @ 3800'.

Lela, what a beautiful dessert! I saw that episode of Pioneer Woman and thought, "hey that's Texas Sheet Cake." Thank you for confirming. I can't wait to try your version. We love chocolate desserts and this one will go into the "Chocolately Goodness" file.

My favorite family cooking traditions
I am on a journey to reclaim family recipes that were lost when the cooks in my family passed away. Cooking traditions are a major part of my passion for cooking. On Christmas Eve, we always had green chili and tamales. Cookie baking, lemon bars, pizzelles , and potica have been a must at Christmas as long as I can remember. My family looks forward to homemade pizza, when we gather as a family to decorate the Christmas cookies. Thanksgiving wouldn't be Thanksgiving without noodles and gravy piled high on mashed potatoes, pumpkin pie, and broccoli and rice casserole. On the 4th of July, there is the 4th of July Potato Salad that I make using 10 pounds of potatoes. Mexican Food is part of our weekly menu--green chili served over mashed potatoes or as a slopper (green chili poured over hamburgers.) I am always making tortillas for someone. They call my tortillas little white pieces of gold. Saturdays are Family night for dinner. It is the one day my kids can request a meal.
My cooking triumphs
Seeking help on the Buzz and the AR Blog has resulted in a few triumphs. I am extremely ecstatic about overcoming the yeast monster. I can now bake baguettes, focaccia and the best rolls in the world, my Grandma Rita's Butter Rolls.
My cooking tragedies
My first attempts at baking bread/rolls resulted in rock hard flat rolls. However, I am improving. Baking at High Altitude is somewhat of a challenge.
