Ramen Cabbage Salad

Love it- I tweaked it slightly using roasted sliced almonds, a cabbage that I shredded, 3 carrots shredded, sesame seeds, cut the oil back by 1/3, and the coup de gras- wild onions (ramps) that grow in our forest, leaves and all! Very pretty, and tasty.

Wisconsin Native's Beer Cheese Soup

I agree with the other reviews; the vegetables need to be sweated until they are tender. I used a sieve to get rid of all the uncooked vegetables. I thought the flavor of the soup was good.

Salmon with Creamy Dill Sauce

This was simple and delicious. I didn't have lemon on hand, but I did have some sour clementines that none of us want to eat.The dill sauce was really delicious. The recipe came together quickly and easily.I'm looking forward to making this with lemon next time- although I must say, the orange flavor was wonderful and a great substitution.

Fig and Olive Tapenade

The partygoers I shared this with had one word for it- WOW. I would use a little less of the herbs next time, just a scant less- and I will add a teaspoon of balsamic vinegar to the 1/2 cup of water. After it sat overnight, I pulsed it in the cuisinart to marry the flavors better. It was very good. I served it with bits of pecorino as well as the cream cheese- it makes a lot of tapenade. I think this recipe is a real winner!

Tuscan Soup

I;m making this again tonight. I am following the advice of others, and rinsing the sausage after I cook it, and using kale instead of spinach. I am using 1/2 and 1/2 instead of evaporated milk, and adding a few extra fennel seeds. Good recipe!

Take Out-Fake Out Pollo Con Crema

This was a delicious recipe! Everyone (including fussy hubby) loved it! It was wonderful over toasted almond rice pilaf. I was a teensy bit short on sour cream, so I threw in a little goat cheese crumbles to make up the difference. Wonderful recipe!

Winter Fruit Salad with Lemon Poppyseed Dressing

I love this salad! It is different from an everyday vegetable salad, easy to make and impresses the teenager in the house. I like it with scallions for a boost of dark green color. It's just as delicious if you peel the fruit, but I like the look of the peel in the salad.

King Ranch Chicken Casserole III

I thought this was a tasty, easy, good recipe. I added fresh cilantro as I actually had some on hand. As with other reviewers, I did things a little differently, and was very happy with the results. I do recommend baking the tortillas until crispy. Mine kept their shape and didn't disintegrate. I would definitely make this again!

Mandarin Pork Roast

Delicious and deserving of all the "wows" I recieved at the dinner table from 8 guests. I wasn't too crazy about the look of the mandarin oranges. I may use fresh sliced oranges next time. Neverless, the easy factor is the reason I would make this again, and I would use the mandarin oranges again if I was on a time constraint.

Prosciutto Wrapped Asparagus

Delicious, easy and something all of my guests enjoyed. I used half slices of prosciutto and light cream cheese in a tub. A light trickle of olive oil might have given the spears a more tender bite, and a sprinkle of kosher salt might have been nice. Next time!

Thai Chicken Curry in Coconut Milk

I have been looking for a recipe like this for a while, something on par with Big Bowl's Thai Basil Chicken. I used soy sauce instead of fish sauce, omitted the lemon zest,and BASIL instead of cilantro. It was amazing! I have a suggestion, that is (as I suspected it would be!)don't add the lemon ( or lime ) juce until just before serving as it will make the coconut milk separate. All in all, a perfectly lovely dish!
