Tortilla Wraps

The recipe is basically good, but needs to be "punched up" a bit. We added 1/4 cup chopped onion, 1 tablespoon of yellow mustard, a dash of onion powder, and 2 teaspoons of Tabasco. A bit of sea salt and fresh ground pepper (to taste) is good too. A little mayonnaise on the tortilla helped it spread more evenly. We garnished each bite sized piece with a pearl onion on a toothpick.

Pork Sinigang

I prefer using pork riblets(pork spareribs cut into bite sized pieces) rather than whole pork chops. Also we add Daikon radish sliced into 2" - 4" pieces. One reviewer says she can't get the Tamarind Seasoning mix easily in her town. Mama Sita's Tamarind Seasoning Mix (1.76 oz.) is available online from several vendors for not too much money.

Too much liquid in the recipe. Too much milk, so the sauce broke. Seasonings are good but need more seasoning salt. Generally a waste of time and good food

Green Bean and Stuffed Olive Salad

Green beans pick up a "tinney" from the can. Avoid this by opening the can, draining the water, rinse the beans still in the can, put a tablespoon of A&H baking soda in the can and add water. Let this soak while you do other things, then rinse the beans in the can, and continue your preparation. This works for other canned vegetables.

Steak Pie

Stewing beef is inherently tough; so those of you who want to use it, use Costco's stew meat. Usually very tender. AND/OR use Adolph's Meat Tenferizer. The recipe works just fine.

Thai Pork Loin

I did not care for this recipe. The stated quantities don't work right, it doesn't reduce, you must use flour or corn starch, the pork is sliced much too thin to brown properly, etc. etc. etc.

Angie's Dad's Best Cabbage Coleslaw

I changed the vinegar to half regular vinegar and half apple cider vinegar. It took some of the "edge" off, and made it seem sweeter. It was definitely a "10" with my guests, even the finicky kids liked it. And these kids are NOT Mikey. ☺

Authentic Louisiana Red Beans and Rice

YES. but,, The other tradition is that a ham was served for Sunday dinner (OBTW Sunday dinner is served about 2:00 in the afternoon on Sunday) and on Monday morning the remaining ham and ham bone and all of the other ingredients were put into the pot at the same time and allowed to cook all day. The beans had to have been soaking overnight.

Cold Spaghetti Salad
