Pressure Cooker Mashed Potatoes

I am not sure if my pressure cooker is different but 30 minutes would cook 3/4" sliced potatoes into oblivion in my cooker... 15 minutes would be more than long enough... I normally quarter my potatoes and they cook through in less than 10 minutes. I'm at high altitude which may make a small difference!

Slow Cooker Low-Carb Santa Fe Chicken

this is a definite keeper. In place of the seasonings I used a Tbsp of taco seasoning which seemed to work nicely. I ate mine like a dip with tortilla chips and the kids used theirs as burrito filling. This is as 'clean' as my eating gets in order to avoid forfeiting flavor... great recipe!

Chocolate Butter Tarts

Really good tart!! If you are not a fan of the traditional butter tart but love pastries and dark chocolate- you should really give this a try! I used pre-made tart shells, baked at 450 for 12 minutes, some of my tarts boiled over but just barely. The brand of shell I used were a little more flaky than I would prefer for a butter tart but once it was in my mouth, no complaints!

Classic Goulash

Made this last night for the family and it turned out great! I followed some of the reviewers and added diced green pepper and diced carrots along with the onions. My picky son went back for THIRDS! It's a keeper!

Oatmeal Date Cookies

I have made this three times- turns out amazing every time. I add more dates and use Pecans because i have a lot on hand. Also I use one cup of Large flake oatmeal and one cup of quick oats as well as cinnamon and cloves but this recipe is definitely a keeper!! (I also get 5 dozen using my small cookie scoop.)

Peanut Butter Bars I

I made these with 'Wow Butter' since my son is allergic to peanuts but still loves the taste. They turned out fabulous and I use 1 1/2 sticks of butter. I'm making them again tonight!

Cowboy Oatmeal Cookies

I didn't want to fiddle around with oil and margarine so I made these with 1 cup of real butter (that was half melted purely by accident in the microwave), I also added a tsp. of cinnamon and 1/2 tsp of cloves and use chocolate chips instead of butterscotch since it was all I had on hand. These were amazing and did not last long!! I'm making a second batch today!

Quick Asian Beef Noodle Soup

This recipe was a Good start but I had to add an additional teaspoon of ginger and a tablespoon of brown sugar to get a some real flavor other than just salt. I also used beef boullion and rice noodles instead of ramen noodles and their soup packets (rice noodles are much lower in fat). I also loaded up with different veggies. This is a great basic recipe though!

Zucchini Brownies

Not sure about this one, I followed the recipe to the letter. It came out of the oven on the dry side, crispy around the edges (nothing a generous application of ice cream and chocolate sauce couldn't remedy). The next morning however it was much more moist and cake like- still not great however. This is definitely not a brownie I'll make again.

Soft Oatmeal Cookies

I added boiled raisins and it really made a difference in the 'moistness' of these cookies. I have made these a few times now and never chill or flatten them, i add cinnamon and cardamom as well. Everyone loves this recipe! Will definitely make this one again!

Delicious Ham and Potato Soup

Have made this soup a couple times and it is by far the best ham and potato soup I've ever made. Comes out perfect every time. I get rave reviews and many requests for the recipe. I add a little bit of diced green pepper and that is the ONLY item I changed from the recipe. Fabulous!

Boilermaker Tailgate Chili

Hubby made this for Greycup festivities- the only change he made was that we used 2 cans o black beans instead of 'chili beans' and he threw in an entire lb of bacon (precooked and drained!)... it was fabulous!! I can't wait until he makes it again! warning, that cayenne pepper heat keeps building in the left overs in the fridge so after a couple days it's a lot spicier than when it's fresh! So good.

Mary Wynne's Crabapple Jelly

Used this recipe for my first time ever making jelly and it came out perfectly with my neighbors back yard crabapples (small, hard, red fleshed type). Just like the jelly my mom used to make! I also chose this recipe because my daughter's middle name is Mary Winn LOL! Thanks!
