About this Cook
I've recently started the Paleo "diet." I can definitely say that I'm happy with the results, at least to date. I haven't seen many (read, I've only seen one) paleo recipes on here which kind of surprised me, so I'm going to, slowly but surely, start posting a lot of the recipes that I've found and have tried or ones that I've managed to create myself. Other than that, I live in California with my boyfriend of almost three years. I enjoy spending time with him and our friends and families...bbqs, watching hockey games, going out to dinner, etc.
My favorite things to cook
I've really been having fun with vegetables lately. I've completely fallen in love with leeks and have been adding them to almost anything.
My cooking triumphs
Have yet to achieve something I would call a "triumph."
My cooking tragedies
An irish cream cheesecake with Guinness topping. The flavors were to die for, however, (despite following the recipe) the texture and consistence was that of a baby's diaper. It was so disappointing.

Slow Cooker Boneless Turkey Breast
I used this recipe with two turkey thighs and a small breast. It was delicious!! Guests were picking at it before it was even served. The only thing that I would change next time is the amount of salt. I would reduce the salt by a 1/2 or a full TBSP because the gravy that I made from the cooking juices was very salty. I also shoved TBSP slices of butter under the skin to help baste from the top down.

Sam's Famous Carrot Cake
I omitted the walnuts because I'm not a fan of walnuts, but this is delicious!! Since I didn't have an 8x12" pan, I used a muffin pan. Turned out beautifully! Will definitely use this recipe again.

Split Pea and Ham Soup I
I've yet to try the original recipe, but I didn't make that many adjustments when I made it. I added two diced carrots, next time, I'll add three. I used four small cubes chicken boullion when I added the water (a cube per cup). I also added a couple of dashes of celery salt. I'll definitely make it again though. It was great with some buttered french bread.
