Adrienne's Overnight Barbecued Beef Sandwiches

Reviewed: Nov. 26, 2010
Leanest, most delicious BBQ meat I've ever tasted! I followed the recipe exactly as written, using the leanest brisket I could find. Trimmed whatever fat I could see before putting the meat in slow cooker. I was a bit weary about the liquid smoke flavor, but am happy to report it wasn't overwhelming at all. This is the most delicious BBQ meat I've ever tasted - definitely a keeper!! It should be noted that despite adding corn starch at the end as directed in the recipe, the liquid sauce is still very then - like broth. Next time I'm going to shred the beef, add it back to the corn-starch-thickened sauce, mix well, drain in a strainer, and then serve.

Sunday Brunch Casserole

Reviewed: Nov. 28, 2010
Followed recipe exactly but it turned out bland and watery. Even after putting casserole back into the oven for 15 additional minutes, it was still liquidy in the middle. I use an oven thermometer to ensure my oven temp is correct, so the issue wasn't caused by incorrect baking temp. Won't be making again.

Overnight Coffee Cake

Reviewed: Nov. 26, 2010
I so wish I could give this more stars, because it has great flavor and the topping is scrumptious. It's not moist enough though. I followed the instructions to a "T" when making it but it definitely didn't turn out to be very moist. Very disappointing in that regard. Not sure how other reviewers were able to get such a moist result. I use an oven thermometer, so I know the baking temp was correct. The only thing I can think of is that maybe I should have left tin foil on it while it baked (the recipe didn't say whether to remove the cover or not when baking it; I took it off because that's how I normally bake cake).

Awesome Broccoli-Cheese Casserole

Reviewed: Nov. 26, 2010
This casserole is okay, but didn't awe me. I prefer a cracker-crumb & butter topping, which this casserole doesn't have (though one can certainly be added very easily). Also, despite using sharp cheddar cheese, the cheese flavor didn't seem that great. Finally, the casserole wasn't very creamy. I followed the recipe exactly as written. Won't be making it again.

Overnight Caramel French Toast

Reviewed: Nov. 21, 2010
I made this exactly as directed and it was DELICIOUS!! I used Thomas' Breafast Bread - the slices aren't as thick as texas toast (which the three grocery stores I went to for it didn't have) but they're thicker and heartier than regular white bread. I put this in the fridge at about 8pm and didn't put it in the oven until about 10:30am the next morning. It didn't turn out soggy, nor was the top "toasty" or dry. It came out perfect!! Moist and good with a lovely, yummy natural syrup. You should note that when you pour the egg mixture over the toast the night before baking, it may seem like there's no way the bread can possibly absorb it all without turning out one big soggy mess. I was worried! When I took the foil off the top of the pan before putting it in the oven in the morning, however, I saw that all the egg mixture had been perfectly absorbed and the bread slices looked great (at which point I then worried it would turn out too be too dry!). I went ahead and baked as directed. It turned out perfect - very moist but not soggy, dry on top, or too "eggy". For those concerned about getting it out of the pan easily, I recommend lining the pan with Reynolds non-stick aluminum foil. I did that and the servings slid out easily. I then inverted them on serving plates, so that the brown sugar syrup was on top. Awesome recipe that I'll be making for our family on Christmas and New Year's Day mornings!!

Praline Sweet Potatoes

Reviewed: Nov. 26, 2010
Delicious!!! I substituted canned yams (rinsed well), only 3 eggs, and I cooked it for 45 minutes rather than 30 (to make sure it wasn't too liquidy). Turned out great! Topping is the very best part - WOW - yummy!!!! The sweet potato part underneath was just a tad watery, but that could be because I used canned yams instead of fresh. The only thing I didn't like was the overwhelming vanilla extract flavor - it was way too strong for my taste. Next time I'll use 3 eggs again instead of 4, but will use fresh sweet potatoes and only 1 Tbsp of vanilla extract. Highly recommend this recipe to anyone who loves sweet (because this one is!) sweet potato casserole. DEE-LISH!

Coconut Poke Cake

Reviewed: Nov. 26, 2010
Made this recipe exactly as directed and it was a huge huge hit!! Very moist, rich, and sweet, even three days after being made. So rich that you won't need large pieces to feel satisfied. Should be called coconut cream cake, it's so moist and creamy tasting (but not overly so). Super easy to make. As mentioned in the recipe, don't let the cake cool before poking the holes and pouring the cream of coconut/condensed milk over it (I didn't notice that distinction until the cake had already cooled, and found it difficult to get the liquid to absorb correctly....despite this, however, it still turned out delicious!!). Definitely a keeper.

Tater Tot Casserole III

Reviewed: Dec. 28, 2010
WOW - this is delish!! A huge hit, not only for me but for my husband and the kids as well! I doubled the recipe and baked it uncovered in a 13'x9' pan. Based on prior reviews, I reduced the milk (I used 1-3/4 cup milk total, for the doubled recipe), and I added 8 oz. of shredded cheddar cheese (mixed in with everything before topping it with the tater tots). Turned out perfect...creamy and moist but not runny. The tater tots were thoroughly cooked and not too mushy. Will definitely be making again!

Pumpkin Pecan Pie I

Reviewed: Nov. 26, 2010
I love pecan pie, and pumpkin pie, but didn't like this pie. I followed the recipe exactly as written. The top layer never completely set. Even after refrigerating the cooked pie overnight, the top layer was extremely runny and liquidy. Also, the flavor combination didn't work for me. You completely lose the pumpkin pie flavor. I had high hopes for this recipe but unfortunately won't be making it again. By the way - if you decide to try this recipe, be sure to use a deep-dish pie crust. I did and even then the top layer nearly spilled over the sides.

Creamy Garlic-Green Bean Casserole

Reviewed: Nov. 26, 2010
I really liked the mild but delicious garlic flavor of this recipe. I don't like the texture though. The sour cream/mayo/cheese mixture sort of congealed around the beans. It's not a very creamy casserole. The "sauce" congeals and kind of globs together. Wish it blended better and was more creamy, because the flavor is very nice. I didn't like the wheat thin cracker topping either. I think it would be better with ritz crackers instead. Won't be making this again.

Ultra Creamy Mashed Potatoes

Reviewed: Nov. 26, 2010
I followed the recipe exactly, including the "interesting twist" at the end. Potatoes turned out perfectly cooked, and flavor was good, but very bland absent the optional sour cream, bacon bits, and chives.

Slow Cooker Pulled Pork

Reviewed: Nov. 21, 2010
Awesome and super-easy!! I used pork tenderloin (I prefer very lean meat, so I use pork tenderloin in all my slow cooker recipes) and a 21.6-oz bottle of BBQ Sauce (instead of the recommended 18-oz. listed in the original recipe). Cooked the roast for 7-1/2 hours, then for another 30 minutes after shredded the pork and stirring in the BBQ sauce (so, total of 8 hours of cooking time). Turned out to be delicious! Lean, moist, easily-shredded....perfect!! I wouldn't limit sauce to only 18 oz, as called for in the recipe. I think it would be too dry without the extra few ounces I added by using a 21.6-oz bottle. You could even add 2 or 3 more ounces and I don't think it would be too moist. 21.6-oz seemed perfect to me. I used Hunts Original BBQ Sauce, but any BBQ sauce will work nicely in this I think. I'll be making this again.

Did not like these cookies. Made them exactly as directed; they turned out dry, with a weird texture and not-so-great flavor.
