Caldo Verde (Portuguese Green Soup)

I adapted this with vegetarian chorizo and added a bit of sharp cheddar as a garnish per another reviewer's suggestion. I also reduced the salt substantially because my soyrizo is very high in sodium. My extremely picky, green-vegetable-hating son and husband both LOVED this soup. I expected them merely to tolerate it, at best. This recipe is a keeper.

Refried Beans Without the Refry

I doubled the cumin and reduced the salt to 2 teaspoons. Used my stick blender at the end just a bit, but still left plenty of whole beans in there, too. They turned out fantastic! No more store-bought refried beans for me!

Vegan Carrot Curry Soup

I replaced half the broth with water because I need to watch out for sodium. I ran the carrots through the food processor before putting them in the broth at the beginning. Then when it was time to puree, the stick blender handled it very easily. Turned out delicious! This will be my standard carrot soup recipe from now on.

Gnocchi with Cherry Tomato Sauce

This recipe gets 6 stars from me! I am a lazy cook so I added water with the crushed tomatoes and cooked the gnocchi right in the sauce. I had roma tomatoes, so I chopped those-- 4 tomatoes was 2 cups, exactly. I am glad I bought kalamata olives and didn't use plain old black olives. The flavor was fantastic as written. Can't wait to make this again!

Spicy Red Bell Pepper Soup

This soup is quite good as is, but it does need a little something to round out the flavor. I added a tiny bit of sugar, and that helped a little. Next time I will try adding extra carrot or perhaps throwing in some tomato. The level of heat was just right for me, but I can see how some people might find it too spicy. I always substitute vegetable broth for chicken, by the way.

Pasta with Greens N Beans

I use vegetable broth and omitted the sausage to make this vegetarian. I sometimes add a pinch of crushed red pepper, but it is fine without that, too.

Brownie Mallow Bars

These are rich and delicious. I shortened the cooking time because I used a gluten-free brownie mix that would have burned otherwise. I also used marshmallow fluff instead of marshmallows to make this vegetarian. Was a little messy spreading it on, but the results turned out beautifully.

Delicious! Used a recipe from this site for Creole Seasoning Blend. Used fresh green beans because I had some on hand. Subbed a vegetarian chicken substitute. Turned out very tasty and the picky eater I served it to liked it.

Roasted Garlic and Eggplant Soup

This soup is epic! I made it vegetarian with vegetable broth and vegan Worcestershire sauce substitutions. I also increased the cayenne to 1/8 tsp., which was fine but may not have been necessary. My husband normally loathes eggplant, but he LIKED this soup. I'd list this one among my top 5 favorite soups of all time.

Black Beans a la Olla

This is delicious! I didn't have fresh cilantro so I subbed about 3 tablespoons of dried. Coordinated nicely with cheesy chipotle mashed potatoes, also on this site.

Broccoli, Leek, and Potato Soup

I really was excited about this recipe because I love just about everything in it. The leeks did not puree well, so I ended up with a pulpy mess that had a decent flavor. The result was not worth the expense and the effort.

Absolutely Fabulous Greek/House Dressing

This will be my go-to vinaigrette recipe from now on. I Increased the oil to match the amount of vinegar, as others have suggested. Was great over cucumber salad with chunks of feta.

Cindy's Snappy Sensational Superfood Soup

Doubled all the herbs and spices except for the garlic and still found this quite bland. Added some salt, lemon juice, and a can of diced tomatoes and that helped. A good start that turns out well with a few modifications.

Mexican Bean and Squash Soup

I made this to use up some extra squash, expecting only to find it so-so, but it turned out delicious! I used nonfat plain yogurt in place of the sour cream. Will definitely be making this one again. Would adapt pretty easily to the crock pot, I think.

Turkish Style Eggs

This recipe is delicious! It's rich and creamy, and nonfat Greek yogurt worked perfectly for a healthier version. Even my super-picky teenagers liked it. I will be making this again, and often.

Moroccan Tagine

This works very well in the crockpot, too. Quorn tenders make a good substitute for the chicken. I think the flavors worked very nicely without any additions. Next time I may double the recipe and really fill the crockpot.

I made this vegetarian with a beef-flavored vegetable soup base in place of the broth. I doubled the basil, garlic, and allspice. I also added a little tvp along with the tomatoes and liquid. This turned out a little thin, so next time I will also increase the cornstarch. The flavor was quite nice, though. If I had doubled the cayenne, I think my kids would have rejected it. As is, it was a satisfying, healthy dinner.
