Oven Roasted Parmesan Potatoes
There were no leftovers. That is my measure of a family thumbs up. I cut the potatoes into smaller pieces for more sides to coat and crisp. I also doubled all the coating ingredients to fully coat the pieces, and "flipped" or stirred about half way through. Awesome!

Deluxe Corned Beef Hash
I had left over corned beef and potatoes so this was a natural selection. I used dried onion (re-hydrated first), left out the carrots, and used dried parsley and thyme. That made it really quick and easy. The most time consuming part was cutting the meat and potatoes up into small pieces. I like finely diced hash. Served with an egg over easy make a great meal.

Slow Cooker Egg Brunch Casserole
Just okay - a little blah in the potato department - we prefer crunchy fried. I even added a lot of spices, and the texture was just like porridge. We'd rather have cold cereal.
