Paleo Coconut Dark Chocolate Chip Cookies

I Tried some with vanilla and they were too bland. They definitely need almond extract. In another batch I added walnuts and a bit of chopped raisins. These were keepers:-) With the additions they rate 5 stars.

Scrambled Egg Muffins

These were tasty. I added fresh spinach, garlic, seasonings. They're great to serve immediately. I didn't care for them after reheating and not at all the next day.

Homemade Mac and Cheese

This will be the only recipe I ever use for mac and cheese. I used good Irish Cheddar and Parm Reggiano grated myself. Large elbows cooked al dente is the way to go in this dish. I did add chopped jalapenos and bit of shaved or minced onion and a bit of dry mustard as well. The topping browned to perfection and the rich and creamy dish was appreciated by all even after rewarming. It made heavenly leftovers, too.

Grandma's Corn Chowder

This recipe produces a creamy and rich corn chowder. It's great as is or with embellishments. I added 3 ears of fresh corn, chicken broth instead of water and just one cup of half and half. No bacon but did have some organic bacon drippings for sautéing. I used a Cuisinart immersion blender on approx. 1 cup of the soup and added it back in before adding the half and half. This method always produces a creamy soup.

Asian Grilled Chicken

Simple and flavorful! Skin on thighs were juicy and tender after baking at 350 for approx. 50 minutes. Turned and basted till they came out beautiful and brown.

Simple and delicious way to serve eggs. I added green onion and garnished with feta. I'd reduce the cooking time on the eggs to 8 minutes or so. Thanks to Crystal:)

Restaurant-Style Zuppa Toscana

This is a nice and simple recipe that packs a lot of flavor. I subbed spinach and half & half and omitted the bacon as that's what I had on hand. Good stuff!

Apple Cole Slaw

This is a great change for cole slaw. I left out the peppers and reduced the sugar but this was indeed refreshing. For those who want it a bit tangy, add a splash of vinegar.

Crab Cakes Chiarello

This was a wonderfully light way to enjoy crab cakes. I didn't use measurements and omitted the mustard but added Old Bay. I reduced the amount of crumbs by at least half and these were fantastic.

Gramma Bertha's Banana Cake

This recipe made a lovely, moist, bundt cake which did not require frosting. I did, however, take some reviewers advice and I added a cup of mini chocolate chips and a cup of coarsley chopped walnuts coated with flour and I mashed the bananas. I had an ounce or two of gold rum on hand and added that as well. It turned out fabulous and I will use this in the future to use up extra bananas. We loved it.

Granny Kat's Pumpkin Roll

I've always wanted to try a roll type cake and this was easy, quick and delicious. I made use of other's suggestions. I only had organic pumpkin pie filling on hand and it worked perfectly. I also substituted half brown sugar for half of the white sugar. Beautiful presentation!

Pumpkin Spice Latte

Simply perfect and delicious latte. I substituted about half the milk with almond milk and only had organic pumpkin pie filling on hand and it turned out wonderfully. I used an immersion wand for the pumpkin mixture and topped with a touch of cinnamon for presentation. Will be keeping this recipe for future use.
