Easy Pepperoni Bread

I loved this bread! I browned some Johnsonville sweet Italian sausage and used it instead of the pepperoni and it was awesome! I followed the rest of the recipe as written except that I used the canned pizza dough as others suggested. I did not find it dry at all - but this could have to do with the extra fat that is added with the sausage. Crunchy crust outside and soft and cheesy on the inside. And oh-so flavorful! What a great snack for a crowd - this was fantastic football watching fare but would also be perfect for a potluck. YUM!

En-light-ened Chocolate Chip Cookies

These cookies were good - very cake like consistency as others have mentioned. But to me they were a bit sweet. If I were to make them again, I would probably cut back on the sugar and add a few more chocolate chips. My teenage boys and co-workers loved them!

Sausage and Tortellini Soup

This was a delicious quick weeknight soup! I used fresh green beans instead of zucchini to suit the tastes of my family and I loved how it turned out. The soup is versatile that way - you could add any vegetables that you like. The pieces of sausage were a bit small so I think I would cut them bigger next time - only cutting them in half first (not into fourths) and then dice. Overall a winner though! Yum!

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

Everyone in our family of picky eaters just loved this dish! We used it as a side dish and served it with pork chops and roasted broccoli. It was so full of flavor - a great replacement for the plain buttered noodles that my son loves and I get so bored with. It is going in my dinner repertoire for sure!

Wavy Lasagna with Italian Sausage and Marinara Sauce

This lasagne was very tasty and oh so easy but I am not sure what I did wrong as it was very soupy. It seems like two jars of sauce may be a bit of overkill - next time I may try it with just one jar.

Cumin Rubbed Chicken with Avocado Salsa

This recipe is fantastic! We used a mixture of chicken thighs and breasts because we have some dark meat lovers in our house. I grilled the chicken on the BBQ instead of frying it in the pan, but used the olive oil lightly brushed on the chicken before rubbing it with the seasonings. I could not find the ground red pepper at my grocery store so I just used red pepper flakes and tried to crush them up as best I could. It was a bit spicy but we love spicy so all was good! I adore avocados so I doubled the avocado in the salsa, and only used a couple of tablespoons of cilantro since I am very sensitive to its strong flavor. Love this dish - the spicy chicken contrasting with the cool and creamy avocados! Delish!

Quick and Easy Goulash

This recipe was so good when substituting the ground beef with Johnsonville ground Italian sausage! It reminded me of a recipe my grandmother used to make when I was growing up. I left out the cheese and let the family decide if they wanted to top their dish with it instead - I have some non-cheese eaters. I also pre-cooked the onion in a bit of olive oil before adding, browning the sausage in the same pan. Delicious!

Amazing Muffin Cups

These muffin cups were amazing! Great for dinner as well as for breakfast!I think I may have used too much hashbrowns because it took 10-15 minutes longer than the instructions to crisp them up. I made the recipe as written except for variations based on taste for each member of my family. That's what I love about these - they are so versatile. One can add ingredients that they like to each cup making them customizable - I left out the cheese for all but mine (and I just sprinkled it on top) and put no peppers in some of them. I even made a few using a some prepared crescent roll dough instead of hashbrowns for my potato averse son. Everyone gobbled them up!

Pork Carnitas with Cilantro Tomatillo Sauce

This recipe is awesome! I couldn't find any of the chipotle chili powder, so I did as other reviewers suggested and just added a bit more regular chili powder and added a touch of cumin for the smokey taste. I think I could have just left the extra chili powder out though. It was a bit too much chili flavoring. Loved the salsa! The tomatillos were a nice change to a regular salsa.

Sweet and Spicy Salmon with Grapefruit Salsa

This dish was wonderful and had such complex levels of flavor. I was not excited by the grapefruit salsa after reading the recipe but the sour/bitter taste that grapefruit normally has was offset by the nice sweet undertones of the rub and it all worked together perfectly! I used organic red grapefruit which might have helped. Two cups of grapefruit is a lot - I had to cut up 4 whole grapefruits and I still only ended up with one and a quarter cup of cut fruit - but it worked fine - I just added quite a bit less cilantro (a couple of teaspoons chopped)and this worked well for me because I am not a big fan of cilantro anyway. I loved the crunch of the red pepper. The Mazola oil makes a rich fish even richer and gives the dish good flavor. Rub the rub onto the fish very gently - I was a bit vigorous and it was caking up me. To serve, I topped the fish with just a tablespoon of salsa and tossed some white rice with some of the salmon drippings and a bit of salsa - maybe a teaspoon of each. Delicious!
