Chicken with Quinoa and Veggies

Absolutely delicious! I substituted a number of things: shrimp for the chicken because I needed to use it up, broccoli for the zucchini, added 1 more tomato because they were on the small side, and mozzarella for the feta. I also didn't use the second 2 tablespoons of olive oil. And I used 2 garlic cloves minced. It only took me 45 minutes to get it on the table after receiving this recipe in my e-mail wondering what to cook for dinner. It was a lifesaver. My husband said it was as good as going out for a nice dinner. A very versatile recipe.

Turkey Squash Casserole

I found this recipe while looking for something that used ground turkey and squash and I couldn't have been happier. This was absolutely wonderful but I made 4 changes. I'm sure it would have been just as good with the original items. For the squash, I ended up using two Sweet Dumpling Squash chopped up since I didn't have summer squash. Cutting it up was a pain but worth the effort. At first I didn't know if I would even get enough to make 2 cups but they just made it. I used 1% milk instead of the evaporated milk and I cut the butter back to 4 tablespoons, and finally I used Ritz Crackers instead of Saltines. My husband and I ate this and we both instantly loved it and had to go back for more even though we are trying to cut back on how much we eat.

Butternut Squash Pizzas with Rosemary

My family was skeptical when I started making this pizza but ended up loving it. I made my own crust using the Pizza Crust for the Bread Machine II recipe here on Allrecipes and divided the dough to make two small pizzas. I also added one clove of chopped garlic to the roasted squash, onions, and rosemary. I used goat cheese, mozzarella cheese, and parmesan cheese lightly on it. It was wonderful. I do think it would be good with a contrasting flavor like ham or chicken especially for those who like some meat on their pizza.

Roasted Potatoes with Rosemary

These were very easy to make and they browned beautifully in the alloted time. I used fresh garlic instead of the garlic powder. My family loved them but I thought they were a little bland so that's why I gave it only four stars. Next time I will add something to give them a little more zing.

Italian Chicken Skillet

This was a big hit with me and my hubby. He went back for seconds and thirds. I had to force myself to stop with the seconds. The only thing I did differently was to add more spinach. A definite permanent recipe in my collection.

Fifteen Minute Chicken Chili

This was the second time I made this and the second time was better. I did make changes from the last time. I cut back to 1 tsp of cumin, I substituted one 10 oz can of diced tomatoes and green chilies for 1 can of the diced tomatoes and the can of green chilies so that caused a reduction in liquid but I only added a little bit of water since I prefer thicker soups, and added a few shakes of garlic powder. We didn't need to add any additional salt to taste because I didn't use any no-salt-added canned goods. I also did not use any cayenne pepper. I shredded 30% fat free cheddar cheese to sprinkle on top and we enjoyed the chili with tortilla chips. I gave it 5 stars because my husband and I felt this recipe is a winner and one I will make over and over again. I also loved that it was so quick and easy to make after working all day and then taking a walk for 50 minutes. I will probably tweak it now and then depending on what I have on hand in the pantry and how much time I have. Delicious!

Creamy Banana Pudding

I already had this Eagle Brand recipe and have been making it since the 1980s. I usually add an extra banana and I don't count out the wafers. I usually have some wafers left in the box. It's the best.

Pumpkin Pie Cake II

Absolutely wonderful. Love it more than real pumpkin pie. Followed recipe exactly except for cutting back on the butter. 3/4s of a cup seemed like too much so I cut out 2 tablespoons.

Pizza Crust for the Bread Machine II

First time making this pizza crust recipe and it was so much better than the bread machine pizza crust recipe I have been using. I substituted 1/4 cup of whole wheat flour for the bread flour. That was the only change I made. This will now be my permanent pizza crust recipe. I used this crust with the Butternut Squash Pizzas with Rosemary recipe. Great combination.

My Version of Colleen's Slow Cooker Jambalaya

First time I've made jambalaya and I think the first time I've ever eaten it. This was wonderful. I couldn't find andouille sausage at my grocery store so I had to buy smoked sausage. Later when I got home I realized I didn't have cayenne peper so I had to use paprika instead. It still had a little kick but I would like to use cayenne pepper mext time just to see. I also added a bay leave. Everything else was exact. The chicken was a little tough but that's kind of to be expected when using cut up boneless chicken breasts in a slow cooker. You can always try the boneless thighs instead.
