Artichoke Spinach Lasagna

Loved it! I used fresh spinach. Next time I'd use non-marinated artichokes, marinated were a little salty. And extra spinach.

Teriyaki Chicken Casserole

This was pretty good. It's not a traditional asian dish if that is what you are looking for, but I really liked it. It was a quick pretty healthy meal. I've gotten so tired of chicken dishes, but this was a nice alternative.

This was the 1st from stratch lasagna that I've ever made. I used cottage cheese and was really good. I might try ricotta next time. I also might try and add some mushrooms or other veggies in it.

Easy Beef Stroganoff

My husband loves Beef Stroganoff. It's not healthy by any means, but you can probably use low fat cream cheese and whole wheat noodles to cut down on the calories and fat.

Beautiful Salad

So awesome. Followed the recipe. Only problem was that I couldn't find honey roasted almonds...so I roasted my own, and I used too much sugar to coat them. Because of the cranberries and mandarine oranges, this salad didn't keep well in the fridge, so I would make just prior to the event and not prepare before hand.

Beefy Cornbread Casserole

This turned out pretty good. It was pretty easy to make. I used ground turkey instead of beef. And I'm not a huge fan of kidney beans, but it turned out pretty good with the corn bread. This will be a keeper for weeknights when I need to quickly put something together for dinner. I'd probably try and add more veggies to the mix next time.

Back to School Sloppy Joes

This was pretty quick and easy. To make it a little healthier I used, Healthy Request Tomato Soup & Ground Turkey. For a little calcium, I added a slice of cheese on top. Pretty good overall, and I will make again.

Sweet Potato Casserole II

This is by far my favorite Sweet Potato Casserole!!! My husband and I really like sweet potatoes, so we make this occassionaly through out the year, not just around the holidays. A great addition to your dinner table!

This turned out okay...we followed the instructions...I just felt like something was missing. maybe some salt? I'd make again, but I'd probably tweek it a bit...maybe add more salt and veggies.

Steff's Shepherd Pie

Another keeper! This recipe was pretty quick and easy. We added carrotts and peas along with the meat and onions and it turned out great. We used grain feed beef that we picked up from our local farmers markets, and it was delish. There's only two of us, so we were able to get 2 meals out of it.
