About this Cook
I married my high school sweetheart and we have a beautiful daughter. I work from home as an executive assistant to my stepfather. I love shopping, reading, writing (I am the recently appointed West Palm Beach Cheap Eats Examiner- http://www.examiner.com/cheap-eats-8-in-west-palm-beach/kristen-kelley), and of course cooking and baking!
My favorite things to cook
Any italian food, mexican or tex-mex food, quick and easy recipes, and I also love to attempt gourmet and interesting dishes- but I have to be careful because I have a picky eater to feed (my husband!). I love putting my personal twist on old favorites- adding things, taking things out...and I'm always creating a new cream sauce. I have a weakness for cream sauce!
My favorite family cooking traditions
I have always loved how my mother and I come together to prepare meals for holidays and parties. I also have always loved how my grandmother always made the same things every holiday (i.e. stuffed shells and easter bread for easter, lasagna for christmas...etc.).
My cooking triumphs
My taco bake, my homemade mac and cheese, my alfredo sauce, and my turkey meat loaf! YUMMY.
My cooking tragedies
Italian honey balls! I should have had my grandmother show me how to make these before moving from NJ! I burned most of them (oil was too hot) and they ended up tasting like doughnuts. I also melted a plastic spoon and stunk up the apartment in the process!

Strawberry Coffee Cake from Smucker's(R)
I substituted applesauce for oil and Truvia for sugar. It looked gorgeous but wasn't sweet at all. Next time I think I. Would use more truvia or sub in splenda brown sugar. It would've been a good quick go to coffee cake had I used enough sweetener but it wasn't anything id rave about. I did like how quickly it came together.

Chex(R) Apple Pie Snack Mix
This is such a quick and eas recipe and it really does taste just like apple pie! It's really easy to "healthify" too!

Sweet Italian Chicken Sausage and Tortellini Soup
I loved the way this soup was light, yet hearty. I didn't have tortellini on hand so I used gnocchi. This was quick, colorful, and keeps well for a quick reheated lunch the next day!
