Kalua Pig in a Slow Cooker
I made this twice -- once, to take to other people. I cooked the pork shoulder overnight, and it was so tender that I didn't even have to shred it … it just fell apart. Then I threw another pork shoulder in the slow cooker to cook for OUR family and cooked it for seven hours. It did not fall apart as easily, and I could tell that it wouldn't, so the last two hours I put the slow cooker on high instead of low. That did the trick. I thought it was very tasty, and perfectly good. Hubby and son wanted barbecue sauce on theirs (too bad -- didn't have any!). I thought that the meat tasted great as is. I'm trying to eat more Paleo-like, and trying to eliminate bread and sugar. Hubby and son had theirs on a bun -- I had mine over "cauliflower rice" with a homemade pineapple salsa on top. FANTASTIC!

Broiled Parmesan-Lemon Tilapia
Absolutely WOW! Probably THE BEST FISH RECIPE I've ever tried. My husband kept raving over and over again how good this was. I did not make this low-carb, so I used real butter and real mayonnaise (which would still work for serious Atkins dieters). The taste was spectacular. I made my own sazon seasoning per another reviewers suggestion, and it was wonderful. That would have been great even without the parmeson cheese blend, but then that parmesan cheese blend was fantastic. We will be making this a regular dish in our house.

Quinoa Pilaf with Shredded Chicken
I've had some success, but more failures, cooking with quinoa. This was the BEST quinoa recipe I've tried so far! I replaced the coconut oil with olive oil, the onion with red onion, the celery with asparagus, and the fresh sage with dried sage. This was really tasty, and the picky men in my family actually liked it!!! This recipe could be easily used for a couple made up of a vegitarian and a carnivore, as the chicken could be thrown in at the last minute for the carnivore!
