Rosemary Ranch Chicken Kabobs

Wow, what a delicious marinade. I can't believe I waited this long to try it. The chicken was moist and the blend of flavors was perfect. I didn't bother to cube the chicken, but instead just marinated the chicken breasts whole and then grilled them. I served it with a mock risotto and corn on the cob. My little guy cleaned his plate. This will definitely be on my menu quite often this summer.

Tropical Salad with Pineapple Vinaigrette

We absolutely loved this salad. The flavors were spot on, even though at first it seemed like they wouldn't work. The only thing I did was sub cashews for macademia nuts, because I didn't have any. The toasted coconut was awesome, and I'm not even a fan of coconut. I will definitely be making this quite often this summer. Thanks for the delicious salad recipe!

Key West Chicken

Absolutely perfect marinade! I did make 1.5 times the marinade for three very large chicken breasts, because it didn't seem like it was going to be enough. The blend of flavors was delicious and it kept the chicken so moist. This is going to be made quite often this summer on the grill...thanks for the recipe!

Cream Cheese Frosting II

Oh my...this is the kind of frosting I can just sit and eat without any cake or cupcake! I have used this several times, on several kinds of cakes and cupcakes and it is a hit every time. It is light, fluffy and absolutely to die for. Thanks Janni for such a wonderful recipe!

Sam's Famous Carrot Cake

Absolutely delicious! This was my first attempt at making a carrot cake and it came out perfect. I left out the coconut and nuts, as a personal preference, and put them on the frosting instead. I also baked it in two 9 inch round pans and made it a layer cake. This cake was super fast (especially using a food processor to shred the carrots) and easy. Thanks for the awesome recipe that is sure to make quite a few appearances in my house!

Smoked Chile Cole Slaw

I love coleslaw and I wanted to love this one, but we weren't crazy about it. I did add less chipolte because we don't like things too spicy and it still turned out quite spicy. I think the cumin overpowered the other flavors, so maybe decreasing the cumin a little would help. On a positive note, quite a few people at my picnic did enjoy it!

Quick and Almost-Professional Buttercream Icing

I just found my go to "vanilla" frosting. The frosting is so light and creamy, not what I expect from a buttercream. I did have to make 1.5 times the recipe to frost 24 cupcakes, but we do like a generous amount on them. Thanks for the fast, easy and delicious recipe!

Warm Corn Salad

I have made this several times and always forget to rate it. This is a great way to jazz up corn. I have used both fresh corn and canned corn and either way it's delicious. I usually use a little less onion, because of my little guy, but I otherwise keep it exactly the same. Thanks for the awesome recipe is that a definite keeper.

Artichoke Mashed Potatoes

What a great twist on the mashed potato. I had bought artichoke quarters by accident, so I had to cut off the leaves. Makes sure to just puree the hearts, otherwise it won't be creamy. Next time I will definitely make sure to pick up just artichoke hearts. I only added one clove of garlic, because I didn't want it to overpower the dish and I'm glad I did, because anymore and it would have. Next time I will definitely try roasted garlic instead. My little guy loved them, so I will definitely making these again. Thanks for the recipe!

Mall Pretzels

Awesome pretzels! I love to make pretzel bites instead with honey mustard. I always get requests for these when there is a party. They are so easy to make, which makes them a definite keeper in my house. Thanks for the 5 star plus recipe.

Breaded Chicken Fingers

Absolutely delicious! 10 stars plus! This is the only way I make chicken fingers now. I have marinated them anywhere from one hour up to six hours and the results are perfect either way. I do fry them, however, in a shallow pan of oil. The garlic powder adds just the right touch. They are crispy and never soggy. Thanks Janet for the perfect recipe.

Cindi's Egg Rolls

Delicious egg rolls! I did make a few changes. I didn't use the pork, which we don't like and I didn't add the pepper strips per a few of the reviews. Otherwise I kept everything else exactly the same. These are fast and easy and a definite keeper in my house. Thanks for the great recipe!

Beef Bulgogi

Delicious! There is no other words to describe this recipe. I didn't think something so simple would taste so amazing. The blend of flavors are absolutely perfect. I only let my steak marinate for about 3 hours and the flavors came through just fine. I may try to marinate it longer next time and see if that makes it even better. This will be a definite keeper in my house. Thanks for one of my new favorite recipes!

Pepperoni Stuffed Zucchini

These were quite delicious with a few minor modications. I seasoned the hollowed out zucchini with salt, pepper and garlic powder. While cooking the filling I also added some seasoning. I topped them with parmesan and mozzarella and served them on a bed of spaghetti with marinara sauce. With these few modifications they will be a definite keeper in our house.

Tomato Basil Penne Pasta

This was definitely a cheesy dish, which I can't complain about because I love anything cheesy. I did double the pasta but only added a little more than the amount of cheese and it was still had plenty of cheese. Overall, it has a very nice blend of flavors with a little kick from the pepperjack. Thanks from the great recipe!

Apple Cole Slaw

This coleslaw was different and quite refreshing. I followed it exactly and wouldn't change a thing. I love the texture of the crisp apple and the sweetness that the red pepper adds. I will definitely be making this one again. Thanks for the delicious recipe!

Amy's Barbecue Chicken Salad

This is my all time favorite salad, at home and in the restaurant. I do a few things a little different, but it doesn't change the recipe. I don't mix the barbeque sauce and ranch, instead I just drizzle them over the salad. I go easy on the cilantro, because the rest of the family isn't too fond of it. Two heads of lettuce is usually too much, so I just use one head of romaine. And the only big difference would be to use crushed tortilla chips, like the restaurant does. This is one of my go to recipes in the summer!

Scrambled Egg Muffins

If my picky two year old loves it then it's a definite 5 star in my book. Unfortunately, I can't comment directly on these, because I don't eat eggs. But, my son and husband (and even the dog) loved them. I did add a bit of leftover ham, but otherwise made them as is. Thanks for the great breakfast recipe that will definitely will be made again.
