Baked Falafel

A definite five star recipe. The flavors blend so well together. It was my first time trying falafel and I think I found my new favorite food. I served them with homemade pita bread and Avocado Tzatziki sauce. Thanks Bette for the delicious recipe.

Avocado Tzatziki

If I could give this 10 stars I would. This was absolutely to die for. I did use the sour cream, which I think really puts it over the top. The only thing I changed was to add much less red pepper because I don't like things too spicy. I served it with Baked Falafel and homemade pita bread, but I think it would be just as good as a regular sandwich spread. This is a must try if you like avocados.

Pierogi Casserole

This was quite delicious. I did make the recipe according to the directions, as I always do making a recipe for the firs time. Next time I am going to layer the onion, garlic and bacon throughout instead of doing it as the top layer. I think this will bring out the flavors more. You do have to make sure that you season your potatoes well or it will be a bit bland, in my opinion. Overall it is a definite 5 star recipe for taste and ease; a definite keeper.

Chili Potato Burritos

I have to say I was a bit skeptical about these, but I am so glad I gave them a try. They were delicious and my whole family kept raving about them. I did make a few changes per the other reviews. I added much more spices so the potatoes were not bland. I didn't mash the potatoes, but instead kept them whole and mixed them with black beans and corns. They ended up getting somewhat mashed, but gave the burritos texture. I did add a little more cheese inside the burritos to keep them moist. I definitely suggest using a homemade enchilada sauce, because it makes all the difference. This is a definite keeper.

A-Maize-ing Corn Chowder

Absolutely delicious (and easy)! I made this a few months back and have made it about every other week since then. It pairs well with cornbread. I do prefer it without bacon, which is not the norm for me since everything tastes better with bacon. I also add an extra can of corn, per another review. To top it off I add some shredded cheddar. It's the perfect recipe for a cold winter's day...a must try!

Cream Filled Cupcakes

I made these today for my son's 2nd birthday. This has to be one of the best cupcakes I've had. It was super easy, even though the thought of filled cupcakes is intimidating. I thought the cake itself was moist and delicious, even better than a boxed cake. I did fill the cupcakes through the top and covered the hole with Chocolate Frosting I from AR. I would highly recommend this recipe to everyone!

Cranberry Pistachio Biscotti

Wow....this has to be the best biscotti I have ever had. It was my first time making biscotti and it was actually quite easy. The word biscotti makes it intimidating, but I had no problems. I would highly recommend that everyone give this a try, you won't be disappointed.

A perfect classic Italian dish. I did end up using a red onion, because it is what I had on hand. I would highly recommend this delicious pasta dish. Pair it with a nice crusty bread and you have a fast and easy anytime meal.

Sun Dried Tomato and Asiago Cheese Bread

This was quite delicious. I have a bread machine, but I decided to make it with my KA. The blend of flavors was perfect. I did use the wheat bran instead of the amaranth flour because it is what I had on hand. The inside was soft and the outside had a nice crust. I highly recommend trying this recipe.

Mock Tuna Salad

This is a 10 star rating, if we could rate it that high! I can't believe how delicious this was. It does have a tuna fish consistency and somewhat tastes like it, but it is 10 times better. I love the fact that this is better for you and doesn't have the fishy taste to it that sometimes makes me not want to eat tuna, even though I like it. Even my husband who isn't into my vegetarian recipes loved it. The only slight differences I made were to leave out the green onion, because I don't like onion in my tuna, added celery and put the pickles on the sandwich instead of the relish, because that's what I had on hand. I believe that I may never buy tuna again now that I found this recipe.

Chicken Marsala Florentine

I was a little skeptical to make this after reading some of the reviews, but I am so glad that I made it anyways. This is absolutely delicious. The only change I made was to double the veggies, and therefore I doubled the sauce. I also decreased the amount of butter to about 3 tablespoons, because 3/4 cup is scary for something that is not a dessert. This is definite a recipe to make if you want to impress someone. It is quick, easy and absolutely delicious. I will definitely be making this again.

Mac and Cheese Henwood Style

Oh my! This mac and cheese is absolutely delicious. I did double the pasta, so I automatically doubled the cheese sauce. Next time, I will only make one and half times the cheese sauce, because it was a little much for a pound of pasta. I tried it right out of the pan and it is just as delicious as baked. It is a sophisticated version of mac and cheese that adults and children will love. The blend of cheeses was perfect and I thought the blue cheese came through beautifully, since sometimes it can be overpowering. Thanks for the great recipe. It is going to be a definite keeper for me!

Sarah's Rice Pilaf

You cannot get any easier than this and the best part is that it is absolutely delicious. This is 100x better than any boxed rice can be. The only thing I added was a little salt, because of the low sodium broth I used. I also don't measure the onion, just chopped half of a big onion and threw it in. It pairs quite well with roasted chicken and butternut squash. Thanks for the delicious recipe!

Creamy Butternut Squash With Cinnamon Soup

As much as I wanted to enjoy this soup because I love butternut squash, I thought it was okay. I'm not sur e what was missing for me. It almost felt like it needed some sort of crunch to it. But, it was worth the try!

Pillow-Soft Dinner Rolls

These were quite delicious. I did make a few bigger for sandwiches, but it still made so many rolls. I think next time I make them I'm going to cut the recipe in half. I think this is going to be the recipe for my Thanksgiving dinner though...Thanks Norma for a wonderful recipe.

Waikiki Meatballs

I don't eat hamburg, but I made these for my family and they absolutely loved them. Since discovering them about three weeks ago, they have asked for them (and I've made them) four times. I think I may try the "sauce" on chicken next time, since they can't stop raving about the taste of them. A definite keeper!
