Hi, My name is Karen and since I'm now a member at I can go ahead and start this blog. The thing I hate the most is trying to figure out "what to make for dinner." We are now empty nesters so that question is now even more challenging at times. Cooking for 2 has… MORE

About this Cook
I've been married over 30 years and have 4 children and 5 grandchildren. I love to try new recipes.
My favorite things to cook
I love to cook Italian type food.
My favorite family cooking traditions
Thanksgiving is a favorite holiday for me. I love to roast a turkey, and all my fixings are always homemade!
My cooking triumphs
I had a sampler party with over 25 people one year. It was an entire seafood buffet including fresh oysters, octopus, squid and shrimp just to name a few.
My cooking tragedies
The day I was making homemade cheesecakes. I dropped one on the floor while carrying it to the oven. Our kitchen had carpet at the time. It was a huge mess!!

Sweet and Sour Pork III
I made this last night. I even went out and bought a deep fryer since I did not have one. This was excellent!! The pork butt roast came out very tender. I did change a few things due to the ingredients I had. I used red and orange bell peppers instead of the green. I did not have cornstarch so I substituted flour instead and that worked just fine. I also added some water chestnuts to the mixture. My husband always orders sweet and sour pork from Chinese take out and he said this was a lot better. a definite keeper!! thanks for sharing

Fluffy Pancakes
I usually don't write reviews. As a matter of fact this is my first time! That is how great this recipe is!! I have made homemade pancakes for a long time for my kids who are now grown and married. This morning I could not find my recipe so decided to look here for a new one. I have now found a new favorite. These turn out light and fluffy and taste great. I did cut the sugar in half only because I'm on a restricted sugar diet. Otherwise I followed the recipe exactly. My oldest daughter says I spoiled her since she can't eat anything but homemade pancakes now. Wait till I share this recipe with her. Thanks for a great new recipe

Slow Cooker Chicken and Dumplings
I was really hesitant to make this thinking the biscuits would not get done. I did make a few changes though. I added some frozen peas and carrots to the mixture. Other than that it was wonderful and my husband commented I could make my chicken and dumplings this way anytime!!
