About this Cook
My favorite things to cook
I love to cook Mediterranean and Healthy. One of my favorite things to make are pastries, whether they are sweets or filled will savory meat filling. Puff Pastry is the best invention; I just have to find a good one without trans-fat. I have made so many great healthy dishes that are favorites to my family. I also like to cook Italian. I make a great red gravy, but I am working on the perfect quick marinara for fast pasta dishes. I prefer to cook non-traditional Italian, but one’s got to have Spaghetti and Meatballs once in while. I make a couple of great Mexican dishes, but I prefer to eat Mexican out. My husband and I have a couple of favorite restaurants, and besides, Mexican is not my favorite in the kitchen. I DO love fusion cooking. I love, what I call, Mexitalian. I have few recipes fused with both Mexican and Italian that we enjoy. I have also been dabbling in a little French style cooking too, but most of all I am traditional. I don’t get too fancy but I do like to go over t
My favorite family cooking traditions
My favorites are my mom’s southern cooking. I love to cook great, down home meals for my family. One favorite is Pork Roast with Pinto beans, Corn Bread and Greens. mmmmmm
My cooking triumphs
I have mastered some pretty great dishes. I have a great sense of what goes with what and what herbs go with certain tastes, etc. I have always been a good cook, but age has made me an even better cook.
My cooking tragedies
I can't think of too many tradgedies, though my husband has had many. I think the only tradgedies that come to mind is when something is undercooked or overcooked, which isn't too often.

Chicken Costa Brava
WOW.....this was delicious. I followed the recipe to the tee except for two little things. I used Pork cutlets instead of chicken and I used a little Bad Byrons Butt Rubb seasoning to the cinnamon and cumin. My husband couldn't stop eating it until the entire pan was gone. All the flavors go well together and I can't wait to try it with chicken. I might add a little cayenne next time too...spicey never hurt anyone. Great recipe, Christy!

There has to be a mistake here with the salt. There is no way there is two teaspoons of salt in this recipe. I used only one and it was too salty. I would say a quarter teaspoon would be enough. If there is an error in this recipe, someone should correct it because it is a great guacamole recipe.
