Beer Burgers

Reviewed: Sep. 18, 2011
I think it was too much beer, the burger was too tender. I made this three ways I took the 1/4 of beer and put it in a pot and cooked it down to 1 Oz. this still gave the full flavor of the beer, but still made the beef patty tender. I also used 1 oz of dark German beer and a good Belgium beer. The left over beer I drank, I hate waste.

Griddle Style Philly Steak Sandwiches

Reviewed: Oct. 3, 2011
There is no "roast beef" in a Philly cheese steak, there is no such thing as a "Submarine Roll" in a philiiy cheese steak it's called a "Hoagie" roll the brand Used in Philly are "Amoroso" rolls. I have bought allot of rolls, and the only other one that comes close believe it or not is from Sam’s club. the first two pictures are not "Hoagie" rolls, they are cheap store bought, mass market knock off rolls, the 3rd picture is a real "Hoagie" roll, but the Ingredients are actually from a sandwich called "Hog Island" sandwich That was created at a World War I era shipyard "Hog Island" in Philadelphia And has nothing in common with this recipe or a philly cheese steak. Let’s just call this a roast beef sandwich.

Pasties II

Reviewed: Aug. 25, 2011
I added turnips, mushrooms, Beef stock paste (more beef flavor), baking powder for the filling (makes the dough flakier). An official Cornish pasty does not contain carrots but I added them in mine, and are included in many recipes of the times. Traditionally associated with coal and copper miners of Michigan and Minnesota. coal miners would carry them into the mines well wrapped for there lunch. They would have there initials on the pasties (like I have mine on this pasty) so they could tell who they belonged to. It is required that they are shaped like a "D", and they are crimped on the sides. need to add baking powder, turnips, mushrooms, extra beef flavor, and brush the dough with egg yoke to give it a nice brown look. see my picture.

Eastern North Carolina BBQ Sauce

Reviewed: Oct. 15, 2011
not bad but, You should use red pepper flakes, and not cayenne pepper. Also cut it down to 1 teaspoon for mild, 1 tablespoon for spicy. Also you do not need to let this set for 1 or 2 days, simply put it in the microwave for 2 mins this will help the pepper flakes to combine with the vinegar.

Easy Beef Stroganoff

Reviewed: Sep. 3, 2012
Not bad if you remove the "Campbell's® Slow Roast Beef Gravy" and add your own home made gravy. by the way the picture has nothing to do with this recipe. I do prefer it over noodles but the pastry shells from pepperidge farms is always good with just about anything. It tastes better with real fresh garlic, and not powdered garlic.

Turkey Burgers

Reviewed: Oct. 20, 2011
too much water, Only use 1/4 cup, and only needs 1/2 of the Lipton soup mix per pound, please don't add anymore salt. After you mix the soup mix into the meat, you should allow it to rest for 30 mins, so that the dehydrated onions will soak up some water.

Juicy Roasted Chicken

very good, but 180F is too high, it should be 165F (breast, and Leg Joints) for a juicy and fully cooked chicken.

Standing Rib Roast

Reviewed: Dec. 9, 2011
It Was Ok, But there Are Issues. Some Water, Stock, Wine Or A Combination Should Be Added To The Pan To Keep The Drippings From Burning. Some Oil On The Out Side Would Help Retain Moisture. Maybe Sear The Outside Before Putting It Into The Oven. The Correct Temps Are. Extra-rare or Blue (bleu) very red and cold 46–49 °C 115–120 °F, Rare (saignant) cold red center; soft 52–55 °C 125–130 °F, Medium rare (à point) warm red center; firmer 55–60 °C 130–140 °F, Medium (demi-anglais) pink and firm 60–65 °C 140–150 °F, Medium well (cuit) small amount of pink in the center 65–69 °C 150–155 °F, Well done (bien cuit) gray-brown throughout; firm 71-100 °C 160-212 °F

Creamed Beef for SOS

Reviewed: Oct. 19, 2011
I ate SOS almost every day for breakfast in the army for over 20 years, if it was avail. I just love the stuff. note that chicken bouilon is not part of the armys version of creamed beef, and this one is also missing worcestershire sauce.

Homemade Four Cheese Ravioli

Reviewed: Aug. 6, 2011
A Standard Dough Recipe, I Use Butter and Not Olive Oil, I Think It Gives a Bigger Flavor. Other Than That A Great Recipe. I did have some cheddar cheese left in the refrigerator so I added it to the filling, and it was good. If you have problems rolling out the dough buy a pasta machine. Even the best chefs have one it was one of my best investments.

North Carolina-Style Pulled Pork

Reviewed: Oct. 14, 2011
I am from North Carolina, and never have I tasted this sauce in north Carolina. It surely has nothing to do with the eastern half of the state. If you want search for something like "Eastern North Carolina Pulled Pork Barbecue" yes it is tangy.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Jul. 31, 2011
You Must Really Like Blue Cheese To Attempt To Cook This Dish. I Recommend Removing The Spinach, And Some Of The Blue Cheese And Replace It With A Milder Cheese Mixed With The Blue Cheese And The Bacon Filling. See My Picture With The Chicken Served With Risotto, And Fresh Off The Cob Corn.

Homestyle Turkey, the Michigander Way

Reviewed: Oct. 17, 2011
good, but the directions should state "bake until meat thermometer registers 180° F in the thigh; 170° F in the breast." some people complained about the time it took to cook there turkey, note that the amount of time would differ depending on what size bird you use that’s why the temperatures give you the best idea when the turkey is cooked.
