Two of my favorite German meals is Wiener Schnitzel and Wiener Schnitzel vom Schwein

In this I used panko bread crumbs and put them in a freezer bag, and rolled them with a rolling pin. then I took two pork loin chops (about an inch thick) and then sliced them thin (each one into 4 slices), then pounded them out very thin (inside a freezer bag). tossed them in the bread crumbs (no eggs, no flour, just using the natural moisture on the pork to hold the bread crumbs on). set them aside for 20 mins separated (not stacked on top of each other) and then deep fry them. Once they are golden brown remove and sprinkle with some Kosher salt.

Looking at that really reminds me of sitting in the Biergarten, sipping (oh heck! Who am I joking?) gulping down really good beer and eating fantastic food. I wish I knew what cut of pork they actually did use for schnitzel. I think it might have been from the ham. Those loins look like they did the job very well though. They are so perfectly golden brown!

to doc simonson, yes you are right. It is the ham portion that gets used for Wiener Schnitzel, Also it is a MUST for origional Wiener Schnitzel to dip them in flour, Eggs and then Bread crumbs. Anything else does not compare to it. I know, I was born in Vienna and lived there the first 32 years of my life. Mahlzeit! Ingrid

now that I am very old, and falling apart I try to cut back on all the breading when frying food. I am actually making it again today but using beef. Since My wife hates chicken fried steak I am calling it Wiener Schnitzel so she don't get wise.

by the way when doing beef, it is best to flour, egg, and bread crumbs. it seems to be ok with pork to take the shortcut and just use bread crumbs.
