I have been playing with soft-boiled eggs for the past few days.
For me I like them Just as the white is all cooked and the yellow is just warmed. I certainly don't like them all slimy.
One thing about popping boiling eggs into a pot of boiling water is sometimes the egg shell cracks. One thing I have noticed is if I dip them into the water using a slotted spoon then take them back out after a few seconds then put them back in they are less
likely to crack. I have also experimented with putting the eggs in a warm bath just before cooking them also allowing the eggs to warm up at room temperature for 15 mins will also reduce cracking.
I found some information that states if you add salt to the water, that this helps keep the egg from seeping out if the egg shell if it does crack. I am not sure if that really works however.
Some people take them out and run them under cold water, but I found that when I get to eat my eggs they are no longer hot or even warm. So I ran the hot water from the faucet and filled a 4 cup measuring cup with hot water (I have my hot water tank set at
115F, so it is just over warm). when my eggs were done I popped them into the warm water then I pealed them under a warm running faucet. Popped them on my buttered toast and they were nice and warm.
The only thing is how much time should I let them Cook. I was cooking my eggs at 6 mins taken directly from the fridgerator, but the yellows were getting cooked, and warming the egg had made this situation even worse so now I needed to adjust the time cooked
down to around 4 mins for them to come out correctly.
There is another method that is called a 3 minute egg (it's not really 3 mins) you put water into a pan, put the eggs in bring the water to a boil, reduce the heat to low, and turn the timer on for 3 mins.
I guess one other thing to consider is altitude and how that effects cooking times. since I am at 182 feet above sea level I have no idea how this will effect cooking time with an egg. I think it is just a matter on how long it will take the water to boil.
I like eating my eggs on buttered toast that I cut up with the egg so all the bread gets covered in the yoke.
