Meatball Nirvana

I HATE meatballs, but I LOVE this recipe!! I am now a meatball lover, as long as it's these meatballs. Since I only had garlic powder on hand, I used that in place of the garlic salt and then just doubled the salt called for in the recipe. Also, since I have kids with little mouths, I made them smaller than what is stated in the recipe, probably about 3/4 inch in diameter. Since I made them smaller, I cut the cooking time down to 17 minutes and they were done perfectly! Cooked all the way through, a little browned on the outside and bottoms, but still nice and juicy. Everyone ate these up and they are being requested to be made again. Thanks so much for this recipe and converting me over to a meatball lover!!

Chef John's Caramel Chicken

This recipe is a love/hate relationship. First off and most important, watch the video!! There are valube tips on the technique of making this dish. I cooked this on high the ENTIRE time and did not burn it. Don't be afraid to use high like the recipe calls for. As long as your flipping or stirring frequently, you are not going to burn it. Also, the cooking time is off on the recipe, at least for me it was. Took twice as long to reduce and caramelize, about 15-20 minutes. The flavor of the dish is like teriyaki. I personally didn't think it was too sweet, like other reviewers mentioned. However, I too agree that this dish is too salty, hence the missing stars. It was almost too salty for me to eat the first night I made it. Others in my family did not think so, though. The leftovers on the other hand were just fine. The saltiness diminished overnight in the fridge. I might have to find a different fish sauce to use or adjust the recipe to my taste. Overall, though, I will be making this dish over and over again because my family and I loved it. Best recipe I've found on Allrecipes in a long time.

Peanut Butter and Maple Oatmeal

I have oatmeal almost every day for breakfast. I'm looking for new ways to change up my oatmeal, new things to add to it. I was intrigued by the peanut butter, so I gave this a try. I made this exactly as stated with the only differences being I used rolled oats (not quick cooking) and Jif peanut butter because these are what I had on hand. It was suprisingly good, but I'll have to make adjustments for my personal taste to make it great. The dish wasn't as sweet as I thought it was going to be, which isn't necessarily a bad thing, just not what I was expecting. The peanut butter muted the maple flavor and sweetness. The peanut butter also gave the oatmeal a wonderful creamy consistency, which I loved! However, it was slightly on the bland side, not terribly bland, but bland enough that I will have to tweak the recipe. Possibly add raisins, cinnamon, maybe add more maple syrup or walnuts. It's a good starting point, though, and gives me ideas for different ways to serve oatmeal. I'm very grateful for that, thanks!

Eggplant Parmesan I

My family and I did not like this recipe at all. I am giving it 2 stars on the basis that we were able to eat it the night I made it. What a shame to waste the time and money. Here's what I found wrong: First off, 1 eggplant was not nearly enough to make more than 1 layer in a 13 x 9 pan. I used a HUGE eggplant that weighed at least 2-3 pounds and it still only gave me 1-1/2 layers. Second, as others have pointed out, the eggplant took such a long time to brown (at least 20 minutes for this step alone, which makes the prep time in the recipe off) and soaked up every bit of the olive oil to where I had to add more for each batch to brown (more than the 8 Tbs called for in the recipe). This in turn made the eggplant goopy and oily. Gross! Lastly, there was too much sauce. The end result was hard to serve, a goopy, saucy mess.

Real Strawberry Frosting

This was worth all the work! I have always preferred making things from scratch as opposed to buying premade. Now I have the perfect recipe for strawberry frosting that is as real as it gets, no jars of frosting.

Taco Seasoning I

Like many others before have said, I will never buy packaged taco seasoning again. Who knows what chemicals, preservatives, and other nasty cancer-causing ingredients are in those packages! Now I have a recipe that I can make in bulk to always have some seasoning on hand. Love it!!

Absolutely Ultimate Potato Soup

This is a good starting point for a potato soup recipe. The soup as is does not fit my personal preferences, so there is definitely room for improvement. I would make this again with some changes, such as the addition of cheese, celery salt, etc., adjust my family's tastes.

Beef Stew VI

This is a good starter recipe for potato soup. The recipe allows room to adjust for one's tastes. I didn't feel it was a five star recipe as there is definitely room for improvement. But that's not to say the recipe itself wasn't great. It had a good meat to vegetable ratio, but there was a slight lack of flavor with the spices. I'm going to have to play around with different spices to get the flavor I'm looking for, or use other's suggestions and maybe add red wine or something.

Rhubarb Cherry Pie

This recipe is a definite keeper! My boyfriend loves cherries and pie. We had some rhubarb lying around that I needed to use up. I made this recipe to the T and it came out perfect!! I could not imagine changing anything. Will be makin this one again and again.

Italian Spaghetti Sauce with Meatballs

I followed the recipe as written. The sauce was great but the meatballs were lacking flavor. I will be making this again but adjusting a few things in regard to the meatballs. I'll also make the meatballs smaller from now on because my kids thought they were too difficult to eat.

Chocolate Glaze I

I would say this is more like a thin frosting than a glaze. It has great flavor but not the consistency I was looking for in a glaze. This recipe does have potential to be fabulous, but as written is not a 5 star recipe due to texture and consistency.

Brown Rice

My family loves this recipe. Here's my trick to ensure the rice gets done in the hour it calls for: I heat up the broth and onion soup before I mix with the rice and put it in the oven. I, too, use brown rice, which has a longer cooking time, so doing this trick helps a lot. This rice compliments a lot of different suppers, so I use this recipe time and time again. I also add different things to it sometimes such as mushrooms, peas, diced up carrots, etc. Love it!

Better Than Pumpkin Pie

The texture and flavor of this pie was spot on to pumpkin pie. My entire family loved it. Unlike other reviewers, I thought the spices were good and weren't too overpowering. The only thing I didn't like was I thought the recipe didn't make a thick enought filling. Even in my smallest pie dish there was room to add more filling. Something I'm going to have to tweak for my own pans I guess, but overall, I'll be making this pie again and again!

Love, love, love!!! I will never use a box again!! I was worried when I saw other reviewers who said they could taste the vinegar. So, I followed the recipe except i let the milk and vinegar sit for longer than 5 min. I bet I let it sit for closer to 10-15 min. I also added 1 tsp of vanilla to the liquid as I always do with my pancakes, even the box junk. Very wonderful! Light and fluffy. Cooked all the way through. The batter did seem a little thicker than what I would expect, but I went with it anyway. Wouldn't change a thing. Hubby wants this over and over. It's a hit!
