About this Cook
I'm a chica who loves to cook but since working full time, doesn't have a lot of time to do so. I have two exotic kitties- one bengal and another part bobcat :-D I am addicted to SPICEY FOOD (thus my nick name). My health endeavors seem to be a never ending roller coaster... I think that's pretty normal for most ppl tho. I have 6 WONDERFUL younger bros and sisters. I've been through hell and a bit of heaven like most anybody... I'm excited about life :-) Didn't used to be that way.
My favorite things to cook
SPICEY. About a year ago I discovered I have a gluten and dairy allergy, so I've been learning a new way of eating. For those of you who have a food allergy like mine, you know what a ...challenge this can be. :-) I've read that gluten and dairy isn't very good for most people anyway, so I'm glad for the opportunity to eat healthier too. Cuz Lord knows I loooooove a good rich chocolate cake with chocolate frosting, chocolate filling, and chocolate icecream, with hot fudge on top.... Mmmmmmm

Fluffy Gluten Free Cornbread
Wow. Can't even tell it's gluten-free! I also used Bob's Red Mill GF All Purpose Flour instead of the millet and rice flour. Also, I used 1 tsp xanthan gum & 2 tsp baking powder (instead of 1 TBSP/3 tsp of baking powder). Definitely will use again.

Grandma Jane's Kicked Up Tomato and Cucumber Salad
GLUTEN FREE, DAIRY FREE AND YUMMY!!!! AM-AZ-ING. Refreshing, and yes, reminds me of a salad version of BLTs. Can't taste a strong cucumber or tomato flavor. Just refreshing and satifying ( nice to have a filling vegetable side dish). I left out the cumin. I plan on making this many times to come.

Eggs Benedict
I followed the recipe exactly, only blending the sauce ingredients in a blender as one helpful reviewer stated. The texture and color of the sauce was wonderful, however, I did not care for this. Extremely sour/tangy. It tastes nothing like any hollindaise my boyfriend and I have ever had, and we've tried it nearly every breakfast place we've been. I would venture to guess if the lemon juice was reduced by a lot, it might taste wonderful. Also, the sauce is a little runny. I wonder if there is a way to thicken it up like they do in a restaurant?
