The Best Rolled Sugar Cookies
Very good. I tried the original recipe first (using ONLY REAL butter) and found the dough too bland, so went ahead and added in 1 cup of powdered sugar and an extra squirt of vanilla extract. It helped the flavor very much. As far as rolling them out, yes, the dough was sticky, but all it took was a layer of powdered sugar on top and bottom to keep it from sticking. I wonder if those people who used margarine had different results because it wasn't butter. With sugar cookies, I cut straight on parchment paper, so there wasn't any moving over the shapes from one surface to the another. It kept its shape very well and I baked at 400 for 5 minutes on the dot for about a 1/2 inch thick dough. They came out beautiful - brown on the bottom, shiny on top, and perfect for decorating. Will definitely keep this recipe around!

Black Beans, Corn, and Yellow Rice
There was no way that amount of water matched that amount of rice, so I adjusted accordingly. The flavor was okay - the corn made a nice crunch. I wouldn't add the beans next time. I found them too squishy and not very flavorful.

Saucy Beef and Vegetable Casserole
Pretty good! It took a bit longer than the directions said to get the biscuit dough to cook all the way through. The biscuits also soaked up a LOT of the beef mixture - next time I think I'll make some more of it to even the ratio. It also needed a bit more salt and maybe some more garlic. Overall, good, and definitely going in the recipe book!
