Spanish Rice II

Reviewed: Sep. 29, 2012
Very good. I used Chicken broth and Rotel's diced tomatoes with habaneros, which made it very spicy. Then followed the directions. I will make this again next time I make Mexican food again

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

Reviewed: Sep. 1, 2012
I always make recipes to a tee first then adjust to my liking. These were good, but holy salt batman. Why do you need any extra salt with 2T of beef bouillon? Next time I'll only use 1t of bouillon to the mix to see how it does.

Pollo Arvejado (Galician Chicken)

Reviewed: Feb. 13, 2012
Thanks for this recipe. I rate it right in the middle. I am not a great cook, but not a bad one either. That being said, I always cook a new recipe as it is written the first time I cook it. Though, I read Patty Q's review so I did use 1 cup of white wine instead of 1/2. The liquid was very watery, so I added 1T of corn starch and 1T of cold water, mixed it up and poured it in. I did that 3 times. It was still watery. I might not have waited long enough. I guess how thick the liquid should be is a personal preference. The chicken was good. It had good flavor. Next time I might at some cayenne pepper to give it a little zip. The fried potatoes were outstanding after they have been sitting in the liquid for a few minutes. Crispy yet soft. I am glad I tried it and I will cook this again and tweak it now to my tastes now. Thanks

Chipotle Crusted Pork Tenderloin

Reviewed: Mar. 1, 2011
this was awesome, juicy and spicy! I followed the recipe as stated. I grilled it over lump charcoal for 25 minutes. I turned the meat every 5-6 minutes. It was pulled when it hit 160º. I covered it on the counter for 15 minutes before slicing it. Use less spice if you don't like a lot of heat.

Porketta Roast

Reviewed: Feb. 25, 2011
Not a fan of dill, but I followed the recipe as stated and I was greatly surprised. The flavors melded well together. It did take a little over 2 hours to cook though. Thanks for the recipe. I will make this again

Whole Wheat Ravioli with Sauteed Garlic Vegetables

Reviewed: Dec. 14, 2008
This was great. When I went to the store to get the ravioli, the 9oz pkg just didn't seem like enough for 4 servings. I bought the 22oz pkg. I love pasta and vegetables in olive oil. Added some crushed red pepper for heat.

Apple Butter Pork Loin

Reviewed: Dec. 14, 2008
After it has been cooking for 1/2 hour I thought the times seemed a little long for pork tenderloin. I went to the computer and looked at some of the reviews saying the time was too long. I took the meat out of the oven and put a thermometer and it was 140º after 45 minutes. I poured out 3/4 of the apple juice and covered the 2 pork tenderloins in the apple butter mixture and cooked it for another 1/2 hour. I put the pork on a cutting board and poured the juices into a sauce pan and reduced it down for a sauce. The pork was outstanding. It had such a good flavor. Definitely will make again.

Gravy Baked Pork Chops

Reviewed: Oct. 25, 2008
This dish was great. Not just in taste but in ease, with the few ingredients needed. I don't like mushrooms (they taste like dirt to me), but the soup doesn't give it a mushroomy taste. I put salt, pepper, garlic powder, and Italian seasoning all over the chops (1" thick). Then I followed the recipe as is.

Citrus Pork Roast

Reviewed: Jan. 1, 2008
Very good meal and EASY. It needs something else spice wise, but can't think of what. I was worried the oj would be too strong of a flavor, but it wasn't. It made a nice gravy. The only thing I added was some sliced onion. Other than that I followed the recipe exactly. Using a 2.5# pork loin, it cooked for 4 hours to get to 165º.

Roasted Vegetables

Reviewed: Apr. 14, 2007
Last night I made this with some steak and it was great. I didn't use some of the vegetables (not a fan of them), but I did use the herbs and vinegar as stated. Also I added fresh garlic. I used red, yellow, orange pepper, fresh broccoli, yellow squash, zucchini, and red potatoes. I put the potatoes in the oven 20 minutes prior to the other vegetables. Then I mixed in the other vegetables and cooked it about 20-25 minutes more. It came out great. Thanks for the recipe.

Italian Pork Tenderloin

Reviewed: Mar. 18, 2007
I would give this more than 5 stars if I could. I followed the recipe as is. The fresh herbs make this meal awesome. I made this meal for Mother's Day last year in an Italian themed dinner. Everyone loved it!!!!! All the ingredients blend great together. I served it with mashed potatoes w/ prosciutto & parmesan (recipezaar) and sauteed vegetables in evoo & Italian seasonings (red, yellow, orange bell peppers, onion, zucchini, yellow squash). Soup was homemade minestrone and salad. The appetizer was smoked mozzarella bruschetta (forgot where I found the recipe) Will definitely make again.

Beef and Parmesan Pasta

Great recipe. I added 1 red pepper, minced garlic and sprinkled crushed red pepper for zing. Added a little water towards the end cause the pasta wasn't quite done. Gonna going to try it with chicken next.

Pasta with Asparagus

Reviewed: Mar. 11, 2004
This was pretty good. I also cooked the asparagus alittle longer. I added minced garlic to the oil the asparagus was going to cook in. For me it did need something more to it. So I put in some cooked chicken.
