Bombay to Bangkok Vegetable Curry

I've made this twice now. Really I just use it as a reminder of the order of things. Usually I melt some coconut oil, saute onion, garlic and ginger in it, dumping in the curry powder, coriander/cumin, mustard seeds and extra tumeric. Then I'll add whatever kind of potato I have, some cut up carrots, cauliflower and garbanzos. I love either green beans or peas (or both) in this too. About 2 cups of veg stock boiled till carrots are done, add the beans cook a little longer til the desired "bite". Lastly turn to low and add 1-2 cans coconut milk. I have to admit I like it creamy so 2 is better to me. I'll probably end up adding more curry powder because I like it spicier than everyone else in my fam. And garlic salt. Everything is better w garlic salt. I never have lime leaves, dont add sugar, and if Im lucky I may have tofu in the house. It is still wonderful. Always serve with jasmine rice. I've gotta learn to make naan sometime. That would be the icing on the proverbial cake. Cheers!

Delicious Ham and Potato Soup

My kids never like what I make, so when they asked what was for dinner, I told them soup and that they could name it after they tried it. They decided it will forevermore be named "Delicious" soup. :)

Fruited Gelatin Salad

Stuffed Bell Peppers, Greek Style

Made this tonight with Tabbouleh II & Greek tzaziki sauce from AR. Really delicious! I nice change from stuffed pappers with italian seasonings. I never had tried lamb before, and at 7 something per pound, I won't be dining on lamb every night, but I must say I'm glad to have tried it. Subtle, juicy, and definitely better than ground beef, I might say even better than the organic beef we buy from a local guy. I did cook the meat/onion mix with a cinnamon stick, and it certainly did no harm. Added feta too, because really, when is cheese a bad addition to a dish? DH gobbled it up, so did I with lots of left-overs. Thanks!

Good easy recipe, especially when you make it all in a plastic baggie! I think a little extra mayo or liquid is a good addition, they're a little dry as made as the recipe states.

Chicken Tortilla Soup V

Mexican Casserole

Made this recipe on a whim, brought to a friend's house to share. The entire casserole was gone before dinner was through! Didn't have "ranch style" beans, but used two cans of chili beans and taco seasoning. Delicious! Would be awesome with sour cream, salsa, jalapenos, shredded lettuce and guac to go with. Try it! Very easy...

Sweet Potato Pie I

OK, I don't actually have this in the oven yet, waiting for a pumpkin pie, BUT, have to stop myself from licking the spoon! This is wonderful! I dare say this will take the place of pumpkin pie from now on. Just delish! Hoping the family will go ga-ga over this like I am right now!

Juicy Roasted Chicken

Had chicken leg quarters on hand. Made a bed of thick sliced onions & celery. Rubbed legs w/ recommended spices, covered w/ more sliced onions and cooked @ 375 for about 1 hour. Put chopped yams, potatoes, carrots, & garlic cloves mixed in kosher salt and EVO in two other pans in the same oven. Everything came out at the same time and dinner was served! Chicken was moist and delicious! Drippings would have made awesome gravy.

The dough is very easy to make and a breeze to work with. I was surprised how much it fluffed up in the oven. These are really delicious - not too sweet and perfect with apricot or raspberry preserves inside, no matter how you roll them. Personally, I found that the smaller ones I made turned out better... I wrapped them like a wonton - bite sized. This is nice for breakfast/brunch or with coffee any time of day.

Foolproof Chocolate Fudge

You just can't go wrong here! I tried making this recipe and Alton Brown's recipe to compare. My husband was convinced Brown's recipe would be superior. I have to say he was wrong. This is nice, firm fudge. Not too sweet and perfect with chopped walnuts. Stick with a good thing. This recipe is a winner!

Spicy Roasted Red Pepper and Feta Hummus

I was inspired by this recipe - made it w/ container of feta, can of beans, 1 jar of peppers, squeezed 1/2 lemon, handful of parsley and about 4 cloves of garlic. Put in the Cuisinart with some olive oil drizzled... took it to a party and they couldn't get enough. These were garlic loving people and this really turned out like a spruced up version of aioli. Fabulous! Thanks for the inspiration!
