Zucchini Boats on the Grill

This recipe was delicious. I did not have the soggy issue everyone had. I prepared it exactly as written except I forgot the tomato and didn't have chilis, so this review is based on that. I boiled the zucchini with the ends on. I cooled for about five minutes and just used a spoon to scoop out the zucchini. After chopping the zucchini, I simply picked it up by handfuls and squeezed out the water before adding to the mix, but there was not a lot. I put each zucchini half in foil and then filled it. There was enough filling to overstuff. I pre-heated the grill on high for 7-10 minutes and then turned it to medium. I sealed the four foil packets and set on the top shelf of my grill and closed the lid. Cooked for 20 minutes. The zucchini was soft, cut with a fork. (If you like firm veggies, this may not be the dish for you.) The cheese was melted perfectly and it looked like it was from a magazine! This is a meal for two, or a nice side dish for four. Update: Took to work and heated in oven for leftovers the next day. They were soggy and there was a lot of water in the foil. Probably better to store in a container and drain before reheating.

Eggplant Pizzas

I prepared as written and it was good. Make sure you shake off any excess flour before frying. The eggplant was fairly flavorless (and since I am not an eggplant fan that was a good thing). The eggplant was soft, which I like. I also prepared again and added pepperoni by quartering pepperoni slices and putting them under the cheese. Added a nice flavor and I preferred it that way.

Ground Beef Curly Noodle

Love this for a quick, throw together meal. You can substitute any veggie on hand or flavored diced tomatoes. I have also substituted black beans instead of ground beef for a non-meat version. Give a try, and play with the ingredients!

No Bake Bumpy Peanut Butter Nuggets

I have to say I love these. I have a big sweet tooth and these satisfied me. I did not get 30 balls, more like 20, but I made them about 1 1/2" balls. I followed the suggestion to substitute the apple juice concentrate with honey. I still gave it five stars as I am sure it would be just as good as written.

Double Tomato Bruschetta

Made this with no changes and it was enjoyed by all! I only suggest you de-seed the tomato so the bread does not get soggy. If you do not know how, search Google for "Deseed Roma Tomato" and there are videos to show you how!

Chickpea and Couscous Delight

This dish is a great basic dish. The key is using the spices to taste as it is bland. As others suggested, I did add balsamic vinegar instead of white, and I added a little more because I liked the flavor. Just a note: If it is easier, just use a box a couscous and cook according to package directions. There are many flavors and you can find it in the rice aisle. Then just use a portion of it for this dish or increase the ingredients accordingly.

One-Dish Wonders

The teenage kids and I did not really care for this. It was okay - not bad tasting at all, just a bit bland. My husband added hot sauce and he really enjoyed it. I served it with tortilla chips and the kids ate it like nachos.

Tuna Macaroni Salad

I made this recipe with the following changes: I used 1/2 cup Miracle Whip, 1/2 Canola Mayo in place of the mayonnaise and I did not marinade overnight as I never plan ahead. I added all the ingredients from the sour cream down in a large bowl, mixed well and then added the macaroni. Over the top of the macaroni I added the Italian dressing and mixed it all together. My picky teenage daughters loved it (and they hate tuna) and my husband like the zing the Italian dressing gave it. I thought it was great as well!

Cottage Cheese Roast

This is certainly an interesting dish. It was okay, and I certainly was impressed by the appearance. My store did not sell creamed cottage cheese, so I used low fat small curd cottage cheese. My husband said he thought it tasted like meatloaf, and my 13 year old daughter said she would not have known is was not meatloaf if I didn't tell her (after she tried it and liked it.) I added two cups of crushed corn flakes, but followed the recipe otherwise. I made a brown gravy to go with it. If you would like this to taste more like your meatloaf I recommend omitting the onion soup mix and adding the seasonings that you would normally use to make your meatloaf. I liked the onion soup mix. You could also add ketchup or BBQ sauce to the top. On a side note I really dislike walnuts but you do not taste the flavor in this. I think the walnuts give it the meatloaf look. I did chop mine very fine. If you feel like trying something different, give it a try.
