Indian Chicken Curry I

I was excited to find a chicken curry recipe using coconut milk as I had had some in an Indian restaurant once and loved it. I enjoyed the recipe a lot, but I think that next time I'd cut down on the tomato sauce and increase the coconut milk.

Coconut Macaroon Brownies

After reading the other review, I decided to make the batter for my fudgiest brownies, because I prefer them to cakelike brownies. Wow! These were great! I'll definitely make these again! As a side note, try looking in the health food section of the supermarket for unsweetened coconut. You definitely DON'T want to use the sweetened coconut in the baking aisle - it would be far too sweet!

Cafeteria Macaroni and Cheese

Oh boy, oh boy, oh boy. This was the BEST mac & cheese I've ever had. I've always done the bechamel bit, and this was soooo much easier, and sooo much better! Thanks!

Cinnamon Pudding Cake

What a tasty recipe! I think it would lend itself well to a variety of fruits - I'd like to try peaches next summer. I think I'd use less than the full amount of sauce, though, because it boiled over in the oven and made quite a mess (or put it on a baking sheet!). In spite of that, I'll definitely be making this again, because it was delicious!

Hot Chocolate Mix I

Maybe I did something wrong, but this recipe just didn't work at all for me. It tastes okay, but the mix just will not dissolve in hot water! I bought a lot of the ingredients at Costco, so if anyone has any hints for what to do with 5 pounds each of Quik and CoffeeMate, please let me know! ;-)

Easy Ham and Noodles

This was pretty good, and lends itself to LOTS of tinkering. Used pasta bowties (no noodles!) and Campbell's Roasted Garlic Mushroom Soup, plus added chopped frozen asparagus and curry powder. Nothing I would serve to company, but when you've got literally pounds of leftover ham, it made a nice change from ham & cheese sandwiches. :-)

Baked Garlic Parmesan Chicken

This is a first-rate quick & easy dish that even my uber-picky husband enjoyed! We're big fans of garlic, so while I cut back on everything else (to make 2 servings), I used TWO garlic cloves, more Parmesan than breadcrumbs and Italian herb seasoning. I also followed someone's advice about using a thermometer, and when it hit 170*, it was PERFECT (took about 40 minutes). Will definitely make again! Thanks Karen!

Flank Steak a la Willyboy

I thought this was quite good, but my husband thought it was a little sweet. I used port instead of red wine (all I had), 3 garlic cloves, some herbs for beef and a tad less honey than called for. I'll make this again, but will tinker a little further. Maybe a touch of vinegar and buy some red wine...good stuff!

Super Easy Chicken Fingers

This was pretty good, not great. I agree with other reviews with regard to the mushy coating. I added some Parmesan, extra herbs & garlic powder to the breadcrumbs, and jacked the heat up to 375*, which probably helped some, but the coating was still "flabby." On the plus side, it was very quick, the taste itself was good, and the chicken was juicy. Maybe baking on a rack would improve the crust? I'll try that next time.

Chicken Jerusalem I

Well, it certainly couldn't have been easier! I followed other comments and used less ranch, but I think I didn't use enough, because I couldn't really taste it. Added some garlic powder, too. My husband liked it, and since he's very picky, I'll make it again. The recipe would lend itself nicely to lots of tinkering.

Savory Garlic Marinated Steaks

I would give this 5 stars, but my husband wasn't quite as thrilled with it as I was. I'll definitely make it again, but maybe use a bit less honey (the outside of the steaks were somewhat charred because of the sugar).

Baked Teriyaki Chicken

We really enjoyed this! Used extra garlic and boned, skinned chicken breasts and baked for 45 minutes. Should have oiled the glass baking dish, though, because it was a beast to clean.

Slow Cooker Maple Country Style Ribs

I probably shouldn't rate this recipe at all because the only things I followed were using ribs (boneless, country-style) and the fact that it was cooked in a Crock Pot. I seared the ribs first, put them in the crock and covered them with some homemade barbecue sauce that I'd canned last year. Covered and cooked for about 7 1/2 hours. Ribs were extremely tender, and I'll definitely use this method again. I might even follow the recipe!

Chicken Curry I

We really enjoyed this! Since my husband won't eat onions, I combined the spices, garlic & oil and made a paste, which I then heated in a skillet. Added the tomato paste & chicken breast (cubed) and covered with water. The chicken cooked very quickly, so I removed it with a slotted spoon so I could cook down the sauce. It was pretty thin, so I made a slurry to thicken it up a bit. The cayenne & lemon juice really made the flavor sparkle! Served it over plain white rice with a salad.

Flank Steak Pinwheels

First rate! Had to make changes (of course!); I used fresh spinach that I sauteed until wilted, shredded Gruyere and no onions (husband hates them). I don't think I flattened the steak enough, because I wasn't really able to create a "pinwheel," but it roasted up nice & juicy and the filling was great. Can't wait to make it again with feta! Thanks!

Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine

This was really good...and lent itself well to major changes. First off, I didn't have tuna, so I used chicken instead. I also added spinach that I cut into chiffonade. I didn't have a fresh lemon, so just used bottled lemon juice. Maybe next time I'll follow the recipe!
