Fancy Fish Italiano

I used this with salmon instead of cod, and it was the best salmon I have ever made. I left out the capers and yellow squash, used fresh basil, and subbed freshly grated parmesan for the mozzarella.

Broccoli Rabe and Sausage

This is our new favorite sausage recipe. It's so quick and easy. I use a teaspoon of oil to cook the sausage in, and then cook the broccoli in the sausage drippings. Garlic powder instead of cloves makes it even quicker, and there's no need for additional salt, as sausage is already pretty salty.

Thai Salmon Salad

This was really good. I subbed red bell pepper for the chile peppers because we aren't big fans of spicy food. I also subbed spinach for the lettuce and sesame oil for the olive oil. This was even better the next day for lunch.

Quick and Easy Chicken Noodle Soup

The combination of turmeric and apple cider vinegar made this very sour and bitter. I added shredded monterey jack which helped a little, but I wouldn't make this again.

Caprese Couscous Salad

This was really good but I didn't care for it cold. Next time I will marinate the tomatoes and cheese at room temperature and add them to the couscous when it's still warm. The pepper was too overpowering for me, next time I would at least quarter the amount.
