Easy Roasted Broccoli

Reviewed: Jan. 22, 2015
Love this recipe. I add garlic powder and I personally prefer my broccoli a little more done, so I typically roast it for closer to 30 minutes. It's also great with sesame oil.

These were really good. I added shredded mozzarella during the last 15 minutes. Served them with lemon basil carrots.

Apple Bacon Tomato Soup

Reviewed: Oct. 22, 2014
This was pretty good. I was worried about the amount of salt, so I used no salt added tomatoes and then just added a teaspoon of italian seasoning. I also used reduced sodium beans and I didn't add any additional salt at the end. I did find that I needed to use the whole container of beef stock though, so I'm guessing I ended up doubling the amount of liquid, to get the consistency that I was looking for.

Asian Crab and Cuke Salad

Reviewed: Oct. 9, 2014
Didn't particularly care for this recipe. I think it would have been better with just rice wine vinegar instead of the white wine vinegar and soy sauce combination.

Tuscan Sausage and Chard Soup

Reviewed: Oct. 9, 2014
I needed a low calorie way to use up some sausage, and this fit the bill very nicely. I did find that I needed to add some chicken broth at the end. I used garlic powder instead of garlic salt, and I left the cheese off.

Fancy Fish Italiano

Reviewed: Mar. 11, 2014
I used this with salmon instead of cod, and it was the best salmon I have ever made. I left out the capers and yellow squash, used fresh basil, and subbed freshly grated parmesan for the mozzarella.

Broccoli Rabe and Sausage

Reviewed: Mar. 10, 2014
This is our new favorite sausage recipe. It's so quick and easy. I use a teaspoon of oil to cook the sausage in, and then cook the broccoli in the sausage drippings. Garlic powder instead of cloves makes it even quicker, and there's no need for additional salt, as sausage is already pretty salty.

Thai Salmon Salad

Reviewed: Mar. 10, 2014
This was really good. I subbed red bell pepper for the chile peppers because we aren't big fans of spicy food. I also subbed spinach for the lettuce and sesame oil for the olive oil. This was even better the next day for lunch.

This was pretty good but it was little too spicy for me. Next time I will use less ginger and pepper.

Elena's Yellow Rice

Reviewed: Oct. 9, 2013
The combination of turmeric and apple cider vinegar made this very sour and bitter. I added shredded monterey jack which helped a little, but I wouldn't make this again.

This was a little too watered down for me. Next time I would either use less milk or less ice.

Shrimp Orzo Pesto

This was too bland and dry for our tastes. I ended up doubling the oregano and garlic powder and using way more pesto.
